Camping! How do I eat?

This is my first forum post, so I didn't even know if I would get any responses, that's why the original post is so vague.
I'll be Glamping, as the new word in the dictionary calls it. I'll be camping in my popup with electricity, and water and toilets very close. I've got a gas stove in my camper, and I have a gas grill I can bring also. This trip is only about 45 minutes away from home, and only 15 minutes away from a grocery store, so I definitely won't be roughing it.
I think I'm most worried because I only cook for myself. At home I can weigh exactly what I'm cooking, no splitting it with someone else and figuring what I am putting on my plate. But all of your responses make me feel much more confident!
I'm going camping Friday, Saturday and Sunday, so it's really only a few meals.
Friday night Hobo meal... (I call it a foil packet meal). Canned sliced potatoes, canned carrots, canned corn, uncle Ben's ready rice and Purdue shortcuts chicken. I love the idea of some cream of mushroom soup. I've always used copious amounts of butter and cheese which obviously aren't the best options.
Saturday Breakfast I'll have eggs, I usually do 2 eggs and 3 egg whites with baby spinach and feta cheese. I think I'll add some tomato in there too. I'm nervous about cooking for 3 and then splitting it up, but I guess I've been doing it long enough that I can guess the amount going on my plate as long as I know what I started cooking with. And as long as I'm off on low calorie dishes it's not that big of a deal.
Saturday Lunch... burgers on the grill I guess. Thanks all for the suggestions on how to do burgers successfully. I wonder if I can get some good corn on the cob in Pennsylvania this time of year?
Saturday Dinner... will be interesting. It's a pot luck. I think I can handle it even if I do go overboard since I feel like I'll have a grasp on the rest of the meals.
Sunday Breakfast can be eggs again.
I REALLY want to do pizza pockets in my pie makers that go over the fire. It's two slices of bread, buttered on the outside, then cheese and pepperoni and pizza sauce on the inside. Can anyone help me figure out a more healthy option? I'm thinking pam spray in place of the butter... and.. low fat cheese?

LOL. Screw that! My water heater was broken for a week and just got fixed. I'm done roughing it for a while!0
