So I wanted cheesecake the other day, but me being me I wanted to make my own, and I wanted to make it healthy..ish.
Let me begin with the fact that I DO NOT bake. Ever. I can cook all day, but I just stay far away from baking where I belong (I burn cookies every time). Anyway, I wanted to give it a shot. So I found a cheesecake recipe, and modified:

(Yields 6 servings)
Filling
- 1 tub of Weight Watchers cream cheese (I'd prefer a natural cream cheese, but it was cheap and I didn't have faith in this working LOL)
- 4 packets of pure Stevia (just sweetened to taste)
- 1/4 c unsweetened vanilla almond milk
- 1/4 plain Greek yogurt (to replace egg)
- 1 tsp vanilla extract (which I have since determined is too much, use 1/2tsp)
- 2 tbsp whole wheat flour

Crust
- 8 Ralph's brand honey graham crackers
- 1tbsp melted light Land O' Lakes butter w/ canola oil
- cinnamon to taste

Oven to 350. Pretty simple, even for me. Crush graham crackers, mix in butter/cinnamon. Press to the bottom of greased pan.
Mix cream cheese/stevia, then mix in yogurt, almond milk, vanilla, flour.

Pour on top of crust, bake for 30 minutes or so.

Here's where I messed up:
I forgot the flour (oops).
I didn't let them cool in the oven for 2-3 hours like I should have.
I got ahead of myself and cut them/took them out of the pan way way way too soon.

So basically, they didn't set properly/kind of fell apart. Hence them looking like a hot mess in the pic- but let me say.. they were DAMN delicious.
