Crustless Strawberry Pie Dessert
Ever since I started my diet, I have been looking for a dessert to have after dinner. Those Special K 90 calorie bars just weren't cutting it. I also tried just having some fruit, but it just wasn't the same. I found this amazing Weight Watchers/Diabetic Crustless Strawberry Pie dessert that I thought you would all enjoy as much as I have. It's very simple and very tasty.
2 cups water
1 (7/8 ounce) package cook and serve fat-free sugar-free vanilla pudding mix
1 (1/3 ounce) package sugar-free strawberry gelatin
4 cups sliced fresh strawberries (I use a quart clamshell)
whipped topping
1 Place sliced berries on bottom of a pie plate.
2 In a saucepan mix the water with the pudding with a wisk, bring to a boil.
3 Remove from heat, add the jello, let cool briefly.
4 Pour over berries.
5 Refrigerate until set.
6 Enjoy with some whipped topping if you like. Delicious!

I added 1 tbsp of spenda to sweeten it up a little. There are many different combinations you can make with this recipe as well. For example - raspberry jello and rasperries; orange jello and orange slices; lime jello and kiwi; ect.
Hope you all enjoy it! Take care
