Dinner!

Options
What'd you guys have for dinner?
I tried to make a greek salad, and I was pretty successful. I even made the dressing from scratch!
I used it as an excuse to finally try Kalamata Olives!

Thought it would be neat to share, it could give me some more ideas for healthier dinner options!

    My mom used to always make it and I missed it, only thing I did different was I didn't use kraft dressing!

    mashed yams whipped with applesauce instead of butter

    Yeah, I liked it a lot better than store bought dressings.
    I added Oregano and garlic, yum.

    I had a spring mix salad with strawberries, cottage cheese and T Marzetti's Simply Dressed Pomegranate dressing,,,,oh yum! along with a cup of boiled rutabaga and 4 oz of pork loin :) I'm still full......

    It's a little similar. I didn't use basil or mustard. And the only powder I used was garlic.

    I used Lemon juice, olive oil, oregano, 1 minces garlic clove, and salt and pepper to taste. Oh and a pinch of sugar.

    It was yummy.

    You guys celebrate Thanksgiving - in the wrong month of course.... :wink:

    Here's how to make them:

    Buy some yams - I prefer the ones that are skinnier and longer (and they are usually a little darker)

    Turn oven on to 350 (degrees F that is - which is what, about 175 C?)

    Put the yams in it

    Bake for at least an hour - the time will vary based on the size of the your yammies (that sounds like some sort of off-color metaphor doesn't it?) Remove them when they get soft (again, that seems like I'm trying to make some sort of innuendo - I'm not)

    Let them cool.

    Peel them - remove the "outer layer" if it doesn't come off with the skin

    Put them in a bowl and whip with a mixer

    Add enough apple sauce to make them smooth and "creamy"

    Green bell pepper, stuffed with lean turkey, brown rice, onions, tomatoes, and covered in homemade marinara sauce and topped with part skim mozzarella cheese ! Yummerz. Sorry about the poor picture quality. I just wanted to take it quick so I could feed my face :P
