I'm feeling awesome!, i've been working out all week and this is my first rest day. I do feel like doing something tho any ideas? its too late to go to the gym or play squash.0

I've decided to have Chinese for dinner (my weekly cheat meal), but I'm going to make it myself so I know exactly what's going into it as far as salt, carbs, protein, etc. is concerned. I make a pretty decent General Tso's chicken and I'm going to have some of that and an egg rollbut I've already factored it into my calories for the day.0

General Tso's Chicken
Ingredients
3 lbs boneless skinless chicken breasts, cut into chunks
1/4 cup soy sauce
1 egg, beaten
1 cup cornstarch
2 cups green onions, sliced
8 small dried chili, seeds removed (chile pequin, bird's eye, etc..)
Sauce
1/2 cup cornstarch
1/4 cup water
1 1/2 teaspoons fresh garlic, minced
1 1/2 teaspoons fresh ginger, minced
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup sherry wine or white wine
14 1/2 ounces chicken broth (a can)
Directions
1.Place sauce ingredients in a quart jar with a lid and shake to mix. Refrigerate until needed shaking it again when you are ready to use it.
2.Mix soy sauce, egg and cornstarch well and add chicken, tossing to coat.
3.Deep fry 7 or 8 chicken pieces at a time in hot (350 degree) oil until chicken pieces are crispy.
4.Drain on paper towels. Repeating until all chicken is fried.
5.Place a small amount of oil in wok or large skillet and heat to 400 degrees.
6.Add green onions and hot peppers and stir fry about 30 seconds.
7.Stir sauce mixture, and then add to pan with onions and peppers, cook until thick. If it gets too thick, add a little water.
8.Add chicken to sauce in wok, and cook until all is hot and bubbly.
9.Serve over rice.

Go to Recipezaar.com and search for "Evergreen's General Tso's Chicken". That's the recipe I used and it comes out wonderfully! Except that I don't marinate my chicken, I just dredge it in flour and seasoning and let it sit in the fridge for about an hour before I fry it.0
