Banana Bread?

Does anyone have any light but still delicious banana bread/muffins/whatever recipes to share with me?

    This fruity cake is so easy to make, so don't
    worry if you haven't done much baking before.
    It doesn't use any added fat at all and it's high
    in fruit and fibre, making it a healthier choice.
    Serves: 12 adults
    Preparation time: 20 mins
    Cooking time: 55 mins
    Ingredients:
    100g low sugar bran flakes
    250ml semi-skimmed milk
    75g ready-to-eat apricots chopped
    50g sultanas
    40g light muscovado or soft brown sugar
    150g self-raising flour
    2 eggs beaten
    1 banana mashed
    What to do:
    1. Put the bran flakes into a mixing bowl and add the milk, apricots and sultanas. Stir well. Cover and leave
    to soak in a cool place for 1 hour, stirring from time to time.
    2. Preheat the oven to 180°C, fan oven 160°C, gas mark 4. Line a 900g (2lb) loaf tin with greaseproof
    paper.
    3. Add the sugar, flour, beaten eggs and mashed banana to the soaked mixture and stir thoroughly. Spoon
    this mixture into the prepared tin.
    4. Transfer to the middle shelf of the oven and bake for 50-55 minutes. Cool in the tin for 10 minutes, then
    turn out carefully and cool on a wire rack.
    Tip 1: You could ring the changes by using dried cherries or dried blueberries instead of apricots, and
    replacing the sultanas with raisins.
    Tip 2: Keep the cake in an airtight tin and use within 1 week. If you like, freeze individual slices in small
    freezer bags, ready to take for a packed lunch - they will have defrosted by midday.

    I posted this the other day. Banana bread made with blueberries in muffin tins (25 - 30 mins) at 95 calories each for 12 servings. You may also make into a loaf without blueberries (50 - 60 mins) at 110 calories each for 10 servings.

    Very easy to make and I always have the ingredients to make this in my house.

    clean eating protein banana loaf

    2 medium bananas (200g)
    1/8 cup (22g) of coconut flour
    3 whole eggs
    2 egg whites
    1/2 cup (46g) of oats
    1/2 cup (54g) of Banana Whey Protein
    1/2 cup (105ml) of milk (any will do)
    1 tsp of baking powder
    flaked almonds to top

    Blend together and bake at 160 for about 40 minutes in a silicone bread loaf pan.

    made this today very easy & sooo yummy!
    i got 8 slices from the loaf 137 calories 12 carbs 5 sugar 10 protein 5 fat

    I make these, but I use banana greek yogurt instead of veggie oil.

    4 tablespoons margarine/butter/whatever, softened (I use smart balance)
    1/4 cup applesauce
    2 eggs
    2 tablespoons skim milk or water
    3/4 cup packed light brown sugar (I sometimes use dark brown)
    1 cup mashed banana ( 2 to 3)
    1 3/4 cup all purpose flour
    2 teaspoons baking power
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 cup coarsley chopped walnuts or pecans (tonight I used cinamon chips)

    Beat butter, applesauce, eggs milk and brown sugar in a mixer bown until smooth add banana and blend at low speed; blend a hight speed 1 to 2 minutes

    Combine flour, baking powder, baking soda, and salt. mix into batter, mix in walnuts. Pour batter into greased loaf pan 8x4x2 inches

    Bake at 350 55 to 60 minutes (when a toothpick inserted comes out clean)

    Cool in pan for 10 minutes, remove from pan and let cool to room temp (I never can wait that long)

    Made with smart balance, cinamon chips (instead of walnuts) and cut into 12 slices it is 139 calories per slice according to the recipe builder.

    How To Make It

    1 2/3 cups all-purpose flour
    1 teaspoon baking soda
    1/4 teaspoon ground cinnamon
    1/2 teaspoon salt
    1 cup sugar, plus 2 tablespoons sugar
    2 eggs
    1/2 cup vegetable oil
    3 1/2 bananas, very ripe, mashed
    2 tablespoons low-fat sour cream
    1 teaspoon vanilla
    2/3 cup walnuts, toasted and chopped

    Preheat oven to 350°F. Sift together first four ingredients. Beat sugar and eggs with a whisk until light and fluffy. Drizzle in oil. Add bananas, sour cream, and vanilla. Fold in flour mixture and nuts. Pour batter into a buttered 9" x 4" loaf pan and bake for 45 minutes, or until a toothpick inserted in the center comes out clean. Makes 12 servings. Lower-fat version: Reduce oil to 1/4 cup, add 1/4 cup unsweetened applesauce (260 calories, 9 grams of fat).
