Hey there,
I am trying to make some muffins or something with applesauce. I am out of oats, but I can always go buy some. I have flour, spices, applesauce, and eggs. Do you have any ideas of what to make?

I just made me another batch of these. LOVE them as a part of my breakfast & they are full of nutrition!
12 cookies- 120 cals each (without the nuts)
2 bananas (I prefer older bananas-easier to smash up)
1 1/2 cups of oats
1/3 cup of peanut butter (I use crunchy peanut butter)
2/3 cup of applesauce
1 tsp vanilla extract
1 tsp cinnamon
1/4 cup chopped nuts (optional)
3 tbs chocolate chips (optional)
Mix bananas & PB together well, add applesauce & oats to banana mixture-mix well. Then add remainder ingredients & let sit 10 minutes. Spray baking pan w/ non stick spray. Scoop spoonfuls (makes about 12 cookies) onto baking sheet.
Bake @ 350 for 20-30 minutes or until browned. When they are done baking flatten them with a fork (like you would a PB cookie). Let cool & harden a bit. I like to leave mine out and not seal or bag them so they get harder. Otherwise they are a bit mushy.0 -
