A non vegetarian looking to reduce meat and milk
I'm trying to reduce my meat and dairy consumption while increasing my whole grain and vegetable intake. I'm no vegetarian but I'd like to rely less on meat based protein.
I would love your favorite vegetarian recipes that use legumes and veggies but avoid pasta and the processed stuff. Thank you!

Spaghetti squash with seared tofu! Delicious and nutritious0

Quinoa Lentil Salad - green lentils, celery, cherry tomatoes, scallion (or really whatever veg you want) mixed with a little olive oil and lemon juice. Mix with quinoa and sprinkle feta cheese on top. Tastes good hot or cold.
Chili with a variety of beans, tomatoes, corn, etc.
When I make spaghetti sauce I replace the meat with green lentils and extra veggies. I top with nutritional yeast for a cheesy taste.
Gardein, Veggie Patch, and a few other brands make some good faux meat products from TVP (though there are also some bad ones out there.)
I once made a good Shepherd's Pie with Bulgur instead of meat. I can't remember the exact recipe but I'm sure it can be googled.0 -

This is what I am having for dinner tonight. I make this recipe A LOT. It freezes well.
Also, fritattas are great and easy and pretty inexpensive :happy:
Corn and Two Bean Burgers. I usually just throw them on a salad.

There's a vegetarian korma recipe on allrecipes that's awesome, it calls for heavy cream, but we just sub that with a can of coconut milk to make it vegan, just pair it with brown rice.0
