Mandarin Spinach Salad

Hello folks, I'm sure you've seen these before or some kind of derivative but I thought I'd share my at home recipe with you.

What you need:

Spinach
Almond Slices
Goat Cheese
Kraft Mandarin Orange and Sesame dressing
Mandarin Orange Slices

Add as much Spinach as you want, a cup is 10 calories. Over the top of the salad crumble 1-2 oz of goat cheese, sprinkle just a drizzle of dressing (you really don't need much at all when you add the orange slices), and drop some orange slices on top. You can mix it up if you feel like it, but I find as long as it's on a plate you'll get plenty of coverage in terms of tastyness.

For a 4 cup spinach salad, with all of the ingredients my salad comes out under 400 calories and tastes great. I find I can't wait to get to the bottom and nab the leftover goat cheese that has rolled up some of the almonds and dressing, yum!

    This sounds delish! I bet it would be great with a little grilled chicken added!!!! I just cut a ton of spinach out of my garden, I am going to try this for lunch!!:laugh:
