I had the same problem recently, and I've found that adding one more snack earlier in the day is helpful to close the gap. That way, there's no major deficit to be filled in the evening.
But when, for instance, I do a more intense workout and suddenly find myself still 500 cals under, I'll do something like take a piece of deli meat, get some cheese, avocado, and maybe some mustard, and roll it up like a wrap. Or you could do a lettuce wrap with a smaller portion of your favorite sandwich items.
My meat-cheese-avocado wrap is usually around 150-180 cals, depending on what kind of meat I use. You could have two of those for about 300-350 cals.
PB and fruit is always nice--or just PB on its own!
Nuts, yogurt, or cottage cheese are other nice options. Or a glass of wine...0 -

I always used to eat cheese and crackers (before I had to eliminate dairy due to digestive issues.) Now I have a serving of walnuts with some dark chocolate chips or some potato or corn tortilla chips (I don't consider it bad if it fits in my cals.)
I don't even monitor carbs so I don't know or care if I'm going over - so if I have a lot of cals left I make some whole grain pasta tossed with olive oil, herbs, and tomatoes, or I make whole grain pancakes with some peanut butter and honey on top. (I do monitor my sugars and try to avoid highly refined white carbs that lack fiber. I don't eat wheat at all due to gluten sensitivity.)0 -

That's a lot of left over calories. I would look at spreading those calories throughout my meals so that I don't have so many at the end of the day. Add a bit more of the food to your meals and see if that works. Also, if you aren't having any snacks, you can add in one, two or three throughout the day. You could easily use your 400 that way. What you use the 400 on is up to you really because only you know what you like.0
