Hey guys.

I have some vanilla coconut milk in the house.
Anybody have any ideas of what I can do with it or put it in?

    On cereal! Although we have tried all brands/types and prefer the SO Delicious Unsweetened coconut milk.

    Or simmer shrimp some shrimp in it... a little bit of curry sauce and the coconut milk is a nice counterpoint to the heat. Great over whole wheat pasta (or other healthy carb)

    I use it in my Iced Mochas.

    1 Shot Espresso
    1.5 cups Coconut Milk
    1-2 tbs Lite Hersheys Syrup

    Mix and pour over ice.

    Its awsome on steel cut oats with a scoop of vanilla whey protien, grapenuts cereal, and granola. Oh ya and coffee!

    she did say VANILLA coconut milk, Im thinking chicken and savory food would be werid?. I would use it for puddings smoothies desserts etc etc.

    I use coconut milk in place of regular milk for most all my cooking. I love vanilla coconut milk in any variety of black tea- the nutty flavor is delightful! I also use it in oatmeal nearly every morning. It also makes some AMAZING hot cocoa.

    For stewed chicken, I stick with canned, powdered or canned pigeon peas in coconut milk. :drinker:

    I use vanilla coconut milk beverage in smoothies, as creamer in coffee etc.

    I mix it in when i beat my eggs in the morning for scrambled eggs instead of regular milk like i grew up with.

    Make a Pumpkin Pie Smoothie:

    Freeze coconut milk an ice cube tray. Freeze some unsweetened pumpkin puree in an ice cube tray. Use same amounts of coconut cubes to pumpkin cubes and sweeten with a spotted/very ripe banana. Add a dash of salt and some cinnamon/pie spice. Blend with a splash of unfrozen coconut or almond milk until you get the smoothie/shake consistency you like.

    Nearly any recipe that you would use milk in and where a vanilla flavor would be nice:

    Pudding - rice, bread, banana, chocolate, etc
    "Ice Cream"
    Cereals
    Oatmeal
    Sweetened Grits
    Curries - if you don't mind them a little sweeter
    Beverages - coffee, tea, smoothies
    Straight Up with cookies :blushing:

    Have fun with or keep it simple, either way it's delicious :drinker:
