My Favorite Taco Soup (Low Calorie!)
Ok guys this is like my favorite recipe ever. I make it atleast twice a month. It fills up my crock pot and I can eat off it for a few days! The best part is its only around 300 calories per 2 CUPS!!! Its so filling because its full of protein & fiber. all of the good stuff none of the bad (except I like to top mine with some daisy sour cream and mexican cheese but I do use it sparingly) so here it goes:
3 Boneless Skinless chicken Breasts
2 cups Fat Free Chicken Broth
2 cups frozen whole kernel corn
2 cans diced tomatoes & green chiles (undrained)
1 can tomato sauce 15 oz.
1 can chili beans (undrained)
1 can black beans (rinsed & drained)
1 medium yellow onions (finely chopped)
1 packet taco seasoning
Throw it all in the crock pot on low for around 8 hours. shred the chicken and throw it back in the soup and you have a delicious low calorie dinner that will seem to last your FOREVER

I just made this soup over the weekend, and it was SO good...and easy. I added a tablespoon of shredded cheddar cheese to my bowl, a tablespoon of fat free sour cream, and a couple of crunched-up tortilla chips. Really good, and filling!0

Sounds like a Great Recipe/Low Calorie Soup, but be careful for those of you watching your Sodium Intake, it's a Killer for me as my body tends to hang onto Salt/Sodium of any kind :mad: :explode: :grumble:
