I have a huge bag of kale I tried to juice and it didn't turn out very well. I've never cooked with it, but I'll take any ideas to try to use this stuff up before it goes bad!

Sautee it in a little olive oil with some garlic and chopped mushrooms until it wilts down. Top a whole wheat pizza crust (easy to find at the grocery store) with goat cheese, pile the kale mix on top of the goat cheese (get the kind that is easy to spread with a butter knife) and bake for 25 minutes at 425. I usually do this with spinach, but I suspect it would be equally awesome with kale. YUM!

    http://thepioneerwoman.com/cooking/2013/01/butternut-squash-kale-quesadillas/

I'm trying out Kale for the 1st time this week and using the above recipe. I'm just altering the recipe to take away some of the fat

    Kale chips!

I also sneak it into salads. When it blends in with lettuce, tomatos, cucumbers, etc the taste is a little more tolerable than eating it on its own.

I made a great chorizo and butter bean recipe for tea last night, with kale. The recipe is on my food diary blog - ameliasfooddiary.wordpress.com :)

Kale pairs well with eggs, so add them to a scramble or quiche.

    Feed it to the livestock:laugh:

Sorry, brassicas give me terrible stomach pains. The only cabbage recipe I can eat is a Hungarian one involving loads of pasta and butter:noway:

Chop it up and add it to soups. There is also a "Green Soup" recipe out there that people love...

Sautee it with garlic and crushed red pepper... Add to whole wheat pasta and sprinkle with parmesan.

P.S. The goat cheese pizza idea sounds awesome!

I also love kale chips. I also wilt some and add it to red quinoa cooked in chicken stock with a few pine nuts thrown in.

Great suggestions! Cannot wait to try some, or if not all of them. As an almost life long vegetarian I have neglected to put kale into my diet until now. I regret that, but now I have so many yummy things to try!

Kale chips! Spread single layer on a baking sheet, spray lightly with cooking spray, sprinkle with salt, and bake on low until crispy. Great to snack on.

Kale is a strong sometimes bitter tasting vegetable.
Growing up I loved Kale cooked with potatoes and then mashed. Cut up the Kale in strips and cook with potatoes, and when soft
mash, add some milk, salt and pepper and then the best part is to fry some bacon and add the bits for a little meat. I subtract the
fat with the bacon since on my diet, but if you'r not looking to cut calories or want to calculate it in, the fat with bacon bits makes it
amazing. Anyway, that is an awesome meal and since dieting I've begun making KALE CHIPS, THEY ARE AWESOME!!

There is a FANTASTIC recipe that I've used in the past (and I'd have to look for it if anyone is interested) for Turkey and Kale stuffed Acorn Squash. It has Fennel seeds that make the ground turkey taste like sausage.

    http://blogs.babble.com/family-kitchen/2011/09/13/stuffed-acorn-squash-2/

I also use it in egg white Fritattas if I want a change from spinach.

    1 1/2 cups egg whites
1 cup FF shredded Mozarella cheese (3/4 cup mixed with everything else, and 1/4 on top)
    1 large Roma Tomato
    1 1/2 cups frozen Kale
    1 tsp black pepper
    1 sauted onion

Mix everything together put 1/4 cup of shredded cheese on top, and pop it in the over (I can't remember if it's 350 or 400 degrees) for 30 minutes (or until set).

Sausage, White Bean, and Kale Soup

The recipe calls for escarole, but my grocery store doesn't have that so I substitute kale. It is me and my husband's favorite soup!
