    Kale pairs well with eggs, so add them to a scramble or quiche.

    I never thought of that. It sounds good. I always add it to my homemade soups. Yum!

    My household loves it raw! Fresh kale is so sweet-tasting this time of year, especially the purple kind. I use it raw for sandwiches, salads, and add into soups or saute lightly for a side dish.

    Whichever recipe you decide on, I recommend removing the thick stems. I like kale so much more since I started doing that.

    I often use kale in place of any recipe that has spinach! Soups/stews, sautes, smoothies, lasagna! :D

    I juice kale, but with stuff like apples and carrots. Also I use it in my smoothies. This morning I chopped up kale and some spinach, with blueberries, strawberries, and a banana, then topped it off with some coconut water and blended it all together. It was good!! I know there are some recipes to make kale chips, I haven't tried those yet though.

    My mother in law who was Portuguese used to make a mean kale soup with linguica, kidney beans, potatoes and kale. I don't remember all the ingredients but it was awesome.

    Kale is sometimes tough so I was surprised at how tender it is in this non-cooked recipe.
    I do not remember the exact ingrediants for the dressing but its close to:

    2-3 TBS Olive oil
    1.5 TBS balsamic vinegar
    1.5 TBS fresh lemon juice
    3-4 cloves of garlic diced small
    1 tsp dijon mustard
    1 TBS soy sauce

    Pull Kale from large stem.
    Wet Kale with dressing and give it a vigorous massage.
    The massage and the lemon juice break it down and make it soft.

    Store the Kale and dressing.
    I can fit two big stalks into one quart mason jar.

    Lasts a week and is a ready made side dish.

    It might be weird, but i like my kale a little burned. Just leave it in the pan a tad longer than you have juices, and it takes on a charcoal taste. then I put it with my quiche or frittata.:smooched:
