    I juice kale, but with stuff like apples and carrots. Also I use it in my smoothies. This morning I chopped up kale and some spinach, with blueberries, strawberries, and a banana, then topped it off with some coconut water and blended it all together. It was good!! I know there are some recipes to make kale chips, I haven't tried those yet though.

    My mother in law who was Portuguese used to make a mean kale soup with linguica, kidney beans, potatoes and kale. I don't remember all the ingredients but it was awesome.

    Kale is sometimes tough so I was surprised at how tender it is in this non-cooked recipe.
    I do not remember the exact ingrediants for the dressing but its close to:

    2-3 TBS Olive oil
    1.5 TBS balsamic vinegar
    1.5 TBS fresh lemon juice
    3-4 cloves of garlic diced small
    1 tsp dijon mustard
    1 TBS soy sauce

    Pull Kale from large stem.
    Wet Kale with dressing and give it a vigorous massage.
    The massage and the lemon juice break it down and make it soft.

    Store the Kale and dressing.
    I can fit two big stalks into one quart mason jar.

    Lasts a week and is a ready made side dish.

  • It might be weird, but i like my kale a little burned. Just leave it in the pan a tad longer than you have juices, and it takes on a charcoal taste. then I put it with my quiche or frittata.:smooched:

    Kale Mango Salad.

    De-stem the kale in a bowl. Squeeze a lemmon on it. Squeeze the kale with your hands until it's wilted. Add a few chunks of mango.

    Dressing: honey, olive oil, lemmon, wisk together (watch the amounts - i'd say 1-2 tablespoons of each). Salt & pepper to taste.

    You can add scallops or salmon to this salad for some added protein. It's delicious!

    Kale is a strong sometimes bitter tasting vegetable.
    Growing up I loved Kale cooked with potatoes and then mashed. Cut up the Kale in strips and cook with potatoes, and when soft
    mash, add some milk, salt and pepper and then the best part is to fry some bacon and add the bits for a little meat. I subtract the
    fat with the bacon since on my diet, but if you'r not looking to cut calories or want to calculate it in, the fat with bacon bits makes it
    amazing. Anyway, that is an awesome meal and since dieting I've begun making KALE CHIPS, THEY ARE AWESOME!!

    I second this i mix it into my sweet potato mash!
