Ok, so I joined MFP on January 1, I want to start this by prefacing that I have had the flu and bronchitis for the past 9 days, so if you look at my food diary, it ain't great....<Sleeping alot......
Anyway two of the things that I NEVER ate before Jan. 1, was cottage cheese and plain oatmeal....BUT since I TOTALLY changed my eating habits, to only fruits, veggies, beans, fish, poultry, cheese, corn free, gluten free, soy free, etc etc....and only dink water and plain unsweetened green tea....I find myself trying to find ways to get at least a 3/4 cup of cottage cheese, for the protein, and a svg. of oatmeal, for it's many benefits, into my food plan everyday.....problem is, I have only come up with one way to eat the cottage cheese, and that's with fruit....and the oatmeal....with fruit...which sometimes puts me over on my carbs.....Does anyone have any other ways of eating either of these two food items? I would really really appreciate any suggestions:) Thanks<<<Beth Ann

always eat oatmeal with cinnamon. sometimes with raisins and walnuts, also. I don't need sweetness but you could add a packet of splenda.0 -

My favorite is cottage cheese and grapefruit. Almost as equally my favorite is cottage cheese and cantaloupe. Cottage cheese with peaches is good too. I don't have a lot of variety on cottage cheese because I love it and really am fine with the few variations. However, I can eat my oatmeal 100 different ways. One thing I do with oatmeal is sweeten it with splenda. I know a lot of people have problems with this type of sweetener, but after weighing 360 lbs and being a severe type II diabetic, I really am not concerned about what everyone says about artificial sweeteners. It's a choice for me. Do I wanna weight 360 lbs and be diabetic or stay at 140 lbs and be diabetic free. Anyway, I also use a variety of sugar free "coffee syrups." I have flavored the oatmeal with hazelnut, brown sugar and cinnamon, salted caramel, etc...Torani has a great selection. I also have added a variety of: nuts, raisins, coconut, apples, bananas, strawberries, the list is endless. I hope this helps a little bit.0

Every day I eat 1/2 cup cottage cheese with some pepper topped with 2 scrambled egg whites and either tomatoes, jalapeno slices, or artichoke hearts on top. Delicious. Love baked potato topped with cottage cheese as well. You can use cottage cheese in lasagna instead of ricotta.
Oatmeal- make some granola bars. Here's a recipe that's yummy, and you can use whatever add-ins you want. Change up the nuts, dried fruit, chocolate, whatever- http://www.skinnytaste.com/2011/06/low-fat-chewy-granola-bars-with-pecans.html
These whole-wheat cookies with oatmeal are awesome too - http://sallysbakingaddiction.com/2013/01/08/healthy-oatmeal-raisinet-cookies/ . Oh wait- you said you were gluten-free... maybe try them with oat or almond flour.
Mix a little jam into your oatmeal and flavor it that way. Add apples and cinnamon and some unsweetened vanilla almond milk.
Make baked oatmeal with berries - http://www.sohowsittaste.com/2012/06/blueberry-raspberry-baked-oatmeal.html . You can make tons of different flavors of this too.0 -
This may sound gross to you but I LOVE cold cottage cheese mixed with hot black eyed peas. Its my favorite meal. As for the oatmeal, I just eat it plain or put some crushed hemp seeds, or nuts in it.0
