what to do with an acorn squash

hubbys grandma gave us an acorn squash, I have no clue what to do with it. I dont want to do the brown sugar and butter stuff, want to keep it healthy, so whats some other recipes? side dishes, main dishes, soups? anything.

    I stuff mine with diced apples, a tiny pat of margarine, and a sprinkle of brown sugar and roast them. Sooo good!

    I bake a whole squash, then add it to curried red lentil soup with coconut milk and Asian greens!!! Yummy!!!!:)

    You can also cook it, purée it and add it to cheese sauce or any casserole. Yummy and creamy:)
