Vegetarians

I know I am eating too many carbs as a vegetarian. Do you guys have any easy recipes with fruits, vegetables, and legumes? I am a student so I don't have a lot of time and money for making big recipes everyday. A friend suggested I make salads in jars a few days in advance and that they stay fresh as long as the dressing is next to hearty vegetables, have anyone had success with this?

    Hi! I never ever make salad in advance as it does wilt, but to be fair I don't use dressings. What about making a simple lentil and veg soup or veggie stir fry using zero noodles. I have heard mixed reviews about them but

    Ooooops I have ordered some as they are carb free and made of soluable fibre.

    Will be keeping my eye on this thread for some new tips

    The zero cal noodle ... i would not recommend...they smell and taste like plastic and do not seem to be properly digested by the body...thus will make you feel sick...not worth it...normal noodles are fine

    Im vegan... i just suggest having things like tofu, tempeh, falafels, beans, legumes ... anything really soy based is generally low in carbs but high in protein and really healthy.. and beans and legumes are really cheap too! (im also a poor uni student)

    Make foods out of veggies and beans with a bit of flaxseed... make them into pancake like things...very yummy! and low carb!

    From personal experience salads that are mostly leafy will wilt if you add moist things (tomato, cucumber etc) if you make them ahead of time. But hardier things work well. I love roasted beetroot, sweet potato and cauliflower-not necessarily together but they travel much better; mix some leaves or spinach/ rocket through on the morning you take them. Something like a quinoa salad too, mediterranean with sautéed zucchini, tomatoes, olives and some fresh leaves keeps nicely. But yes, I find vegetable based salads are best for pre preparing, otherwise maybe keep moist ingredients diced in one container with dressing and add to leaves at the last minute.

    I also like to keep a small portion of cooked rice vermicelli in the fridge, carbs I know, but it makes an easy, versatile bulker for many things. No more than half a cup is needed, so not much at all, but it's easy to throw in to some sautéed vegetables for an almost instant dish(-you could also cook a large batch of veg and just heat it when you need it?), I also use the vermicelli in salads. A thai style one is nice; a small hand full of the vermicelli (as little or much as you want), mixed lettuce leaves, some mint and basil, fresh chilli, cucumber, tomato, onion, bean sprouts, maybe tofu. I use a dressing of fresh limes, brown sugar and fish sauce.

    Stir fries and the oven are my two best friends.

    Most days for lunch at work I have Quorn mince (meat-free - most supermarkets over here do their own cheaper versions), pasta, mushrooms, onions, sometimes sweetcorn, pasta sauce, cheese and garlic bread.

    The mince is about £3 a bag, but you can get cheaper like I said
    I buy a huuuge bag of pasta that lasts for ages and is cheap
    Frozen veggies are the cheaper option - so you could buy frozen peppers, frozen onions etc
    Cheese is also extra protein, and the sauce is a big jar 500g for £1.

    You could also change it up and have mince, pasta/rice with chilli flakes (little jar is about £1 and you only need a little so will last ages) and tinned kidney beans in tomato sauce (about 50p for 2 servings).

    I also like a tortilla with ketchup/some kinda sauce like sour cream, fake chicken and peppers with a bit of grated cheese.

    I also get Linda McCartney sausages - 6 for £1. You have loads of options.

    Peanut butter, chocolate spread and milk in a shake... whey for £10 that would last months... chickpea/lentil/paneer curries, fake chicken stir-fry... list is endless.

    Roast a whole lot of root veg, - it takes time to buy it and cook it, but then you've got at least three days food. Have it with dressing for salad to take to college with you, delicious with feta, blend it with a stick blender and stock cube for soup, heat it up with chilli sauce and have a little bit of rice with it. You can also freeze it for another week so do a lot. Mix it with canned beans. All yummy!

    Try This:
    1 can of chick peas drained and washes
    1 small red onion diced
    2 chopped tomatoes
    3-4 table spoon chopped cilantro
    1-2 green onion chopped
    1 jalapeno chopped
    add salt, lemon juice, little sugar, cumin powder

    tastes yummy...:)

    Here's an easy, cheap way to make lentil burgers. Purchase a can of lentil soup, add oatmeal, bread crumbs if you have them, some spices and form into patties. Spray PAM in pan and cook till done. Use condiments like a person would on a burger....:happy:

    Hummus wraps loaded with veggies on a joseph flax wrap or pita,
    a veggie bake (like lasagna but using eggplant as noodles)
    veggie burgers
    black bean burgers (google a recipe) with salad or veggies.
    lentil loaf (google a recipe) with salad greens

    I have the same problem but preparation has been the key
