Help needed!

I need some suggestions for quick, no cook (or very little cook!) meals for dinner. I try to eat as "clean" as possible, try not to eat anything "white", and am a "fussy eater" - always have been. I do fine with breakfast and lunch and the occasional snack - pretty routine, I eat pretty much the same every day. My problem is dinner. I get home from work and do not want to think about cooking anything or even spending more than 5 minutes preparing something to eat. So, sadly, I often will just have a few glasses of wine (don't judge!!!) and something very simple (like rice cake with cheese) or nothing at all! I've put on about 8 pounds since summer, but I've also been lifting heavy and I'm not necessarily concerned with the number on the scale, so I'm not trying to lose any weight. I've done the whole BMR/TDEE calculation and should probably be eating more than I do. What I need are some suggestions for some healthy, clean meals I can put together in a flash! My diary is open, have a peek. And forgive me the Tyson Buffalo Chicken strips....they are my husband's and were in the freezer... we are leaving for 10 days of vacation and I have no food in the house!!!!

    Easy and quick.
    take 3 slices of deli turkey slices, put them in the frying pan. no oil needed. let them cook a bit and their own oil greases the pan.
    take 1 or 2 eggs scrambled, add some mushrooms and a handful of baby spinach. put the mushrooms and spinach on top of the turkey, then pour the eggs over top. cover. once the eggs set a bit, flip the turkey over like a reverse omelette. make one for each of you, add other veggies you like, maybe some cheese, but its super filling and loaded with protein.
  • I buy ground turkey in bulk, cook it, and freeze it in portions. When I need a quick dinner I thaw it out in the microwave, throw it back in a skillet with frozen spinach and onions. When the spinach is cooked I add in brown rice and feta cheese. It's so yummy, and fast! I'm a super picky eater myself and it makes it challenging!
