    In a plastic Baggie place:
    2 lbs. skinless boneless chicken thighs
    1 med-large chopped onion
    4 pieces of garlic-finely chopped
    2 tablespoons tomato paste
    1/4 cup extra virgin olive oil
    The juice from 1 lime
    1/4 cup water
    2 tablespoons coarse ground mustard (I use Grey Poupon)
    Salt to taste
    Pepper to taste

    Squish Baggie around till everything is well mixed.
    Place in fridge for several hours (you can even do it the night before or in the morning)
    Preheat oven to 325
    Arrange chicken and marinade in baking pan.
    Bake for 1 hour or until fork goes in easily.

    This chicken is soooooo amazingly delicious-I promise you.
    Everyone in my family loves it.
    It's my own invention;-))

    Place 3 chicken breasts in crock pot - I envelope low sodium taco seasoning and one envelope Hidden Valley Ranch Dressing (powder) and one can each:
    Rotel - mild
    White whole kernel corn
    Black beans
    Low sodium red kidney beans

    Let simmer all day and then shred chicken at end of cooking (6-7 hours) and you can serve this on whole wheat flour tortillas, as a soup or also serve over brown rice. Top with light sour cream or greek yogurt!

    Nutrition:
    239 calories - 1 cup serving size.

    Makes a lot and I freeze 1 cup serving size in ziplock baggies and freeze - take out when needed for a quick snack or meal.

    One of my fav go to chicken recipes that takes barely any prep time at all:

    Preheat oven to 350

    Place 4 chicken breasts in a glass pan (best if you pound so all of them are the same thickness, and helps to reduce cooking time)
    about 4-6 squirts of parkay spray
    salad supreme (liberally sprinkle according to your taste)
    1-2 tsp parmesan cheese

    cover with foil and bake for 45 minutes, uncover and bake for an additional 10 minutes to get the topping a nice golden brown.

    I serve with just about anything under the sun, but our fav is with a baked potato and broccoli.

    Depending on the size of the breast it is about 175-200 calories, salad supreme adds a ton of flavor with minimal calories :wink:

    my mom discovered this white chicken chili recipe from men's health one day while working out. It's really good, and only takes about 30 minutes. I don't like beans so when I cook it for myself I just don't add the beans. My parents like to serve this over steamed rice.

    This makes 8 servings with only 270 calories.

    Boneless chicken cut how you want, dip in plain greek yogurt + seasonings of your choice. cover with crushed corn flakes. Bake till done.

    diced frozen peppers
    optional spicy pepper or your choice
    red onion
    optional garlic
    oil

    how much of each depends if you're just making
    it for 1, or for everybody and their mom

    throw those in a dutch oven, crock pot, with
    frozen chicken- for quick cooking tenders work well
    for longer cooking breasts/thighs work better- bigger peices
    and a cup or more of your fav. tomato sauce or salsa.
    and some water

    i didn't measure how much of each liquid i just covered the chicken
    in tomato sauce and seasonings
    with a bit of water on the bottom of the dutch oven so the tomato sauce
    doesn't burn.
    check on it once in awhile, but will take about 1 hour -90 mins to cook on the
    stove, can't remember how long it took in the crock pot.
    best chicken ever, use your fav seasonings to make it different each time.

    Last week I made a buffalo chicken pizza.
    Cubed chicken breast, fat free ranch dressing, your favorite hot sauce, and mozzarella cheese. I used a whole wheat premade crust from the grocery store, but you can surely make your own.
    Use the ranch as your sauce base, and cooked cubed chicken gets smothered in hot sauce. Cheese up the top of it. Oven@ 400 for about 13 minutes and its good to go. You can make it lower cal with a different crust, or lower calorie cheese. It's like cheating your diet and eating pizza without actually going over your metrics.

    buffalo chicken in the crockpot
    I made this last night, it would be good in taco shells, on chips, or just alone. I ate it with brown rice black beans and light sour cream.

    boneless skinless chicken
    hot sauce (whichever you like, though I used sweet baby rays buffalo marinade)
    jar of salsa
    fiesta ranch packet

    throw it all in there and put it on high for 4 hours. shred it. your done!


    Spinach Artichoke Chicken
    thin sliced chicken breasts 2 @ around 4-6 oz
    artichokes 1/2 cup
    plain greek yogurt 1/4 cup (could use mayo too, but I don't care for it)
    part skim mozzarella cheese 1/4 cup-1/2 cup
    spinach chopped however much you want

    in a bowl I mixed all of the above ingredients together. I browned the chicken in a pan, you can use olive oil, but I just used cooking spray. Top with the mixture above, you can sprinkle some remaining cheese on the top too. bake in the oven around 400 for about 5 minutes, then set it to broil until the chicken and cheese just start to brown.

    YUM, I always make this recipe and put the other in the fridge for the next day :)

    6-8 boneless skinless chicken thighs
    1/2 cup sugar free honey
    1/2 cup reduced sodium soy sauce
    1/2 cup brown sugar
    2 Tbs minced garlic

    Mix in crock pot and chicken will shred. Taste great over plain mashed sweet potatoes!!
