Canada Day PHOTO South-Western Black Bean Salad

It's Canada Day, so Happy Birthday Canada! Most of you I'm sure are headed out to a BBQ or picnic today, I myself was just excited to do 50-Min of Turbo Jam on a weekday, woo! Maybe I'll go swim at the in-laws later today but it’s chilly unfortunately, only 20 so I probably wont brave the “cold” :(

Anyway, why not try this at your BBQ. It's a great side salad or even a dip - be sure to buy the scoop kind of chips in order to get all this goodness into one bite.

South-Western Black Bean Salad

¾ cup black beans, rinsed and drained
¾ cups frozen corn, thawed
1 small tomato
½ avocado
¼ cup red onion
1 scallion, chopped (optional)
1 ½ tbsp limejuice
1 tbsp extra virgin olive oil
½ tbsp dried cilantro (or 2-3 tbsp fresh)
Pepper to taste

Directions: Combine all ingredients except avocado. Marinate in the refrigerator 30 minutes (optional).
Add avocado before serving.

WW Points: 7 (serving 2 people as a meal)

Nutrition: Serving 2 as a main vegetarian meal (goes great with rice – not counted) is 485 calories, 19.3g fat, 16.9g fiber, 5.7 sugar. Spit it into 4 as a side salad is only 4 ww points 243 calories, 9.7g fat, 8.4g fiber, 2.9 sugar.

    Hey, your right! Thank goodness for google. We didn't call it Canada day until 1982 which was the year I was born so that makes sense for me, lol!
