    I've made this several times since it was originally posted (making it tonight in fact) and while the original recipe is great, I can safely recommend the following possible tweaks having tested them myself. I doubled the black beans, halved the cheese and used 20oz of diced cooked chicken (I can my own whenever I find chicken breasts on a good sale) We really enjoy this recipe. My modifications make it 270 calories per nice, big serving. I eat it as is, but the kids like it on flour tortillas and with a dollop of sour cream. :happy:
