Chocolate Tofu Pudding

My husband's mom makes this all the time and I just tried making it myself tonight. It's so easy and is a great way to sneak in some tofu if you have little ones. The consistency is smooth and creamy and it just tastes so good. I want to try cutting down on the sugar a bit or substituting with some splenda perhaps.

Chocolate Tofu Pudding

Makes five 1/2 cup servings

One package Lite Silken Tofu (I used Nasoya 16 ounce)
2/3 cup white sugar
1/3 cup unsweetened cocoa powder
2 teaspoons vanilla
pinch of salt

Put all ingredients into food processor and blend until smooth and creamy (about 2-3 minutes). Tranfer to bowl or rammekins and chill in refrigerator. Enjoy!

    I actually tried this without the sugar. I think I added vanilla extract instead. it was sooo good!

    Yeah, I', thinking you could cut the sugar in half and it would still be tasty. Will try next week :)

    I've just bought a batch of tofu to experiment with and didn't realise til now that you can have it raw! This sounds yum, I'm going to give it a go.

    I used to live near an Asian grocery store that sold almond silken tofu - so delicious!

    I have to vouch for this - it's really good! Unfortunately I realized that my stomach is really sensitive to tofu and other soy products so I can't make it anymore :/ I miss experimenting with silken tofu!

    Sounds yummy. I've been curious about puddings made with silken tofu, so I'll be giving this a try, but I am going to try it with less sugar. I may even try to trick my husband (he's also doing MFP) and not tell him it's tofu. Thanks for sharing!
  • I make this but use agave necter instead of sugar. You can also put it in muffin cups and freeze for a frozen treat.

    Yeah, I had a protein bar FAIL the other day because I messed with reducing certain ingredients. What a waste. Si I just stuck to the recipe, but if I can do with less sugar, no sugar, or stevia or whatever sub, than I'd be happier with a lower carb and sugar count.

    It was so good though and it's worked into my diary for tonight again :) (two rammekins left from last night's batch)

    Made this tonight. It is absolutely delicious! Incredibly smooth and creamy. You would never guess it was tofu and not dairy. My (meat and potatoes) husband LOVED it. We'll definitely be making it again. Super easy, too.

    I did cut the sugar down. I used just a bit over half the amount stated. It was perfectly sweet for us.

    Okay, now I am officially addicted to tofu chocolate pudding. It is just heavenly, what else can I say? :love:

    The first time I made it, I used the soft silken tofu. This last time, I tried the extra firm. This really took it over the top because it makes a thicker pudding, which makes it seem even more decadent. I can only find 12 oz packages of tofu, so I just make 2 servings. I still use 1/3 cup cocoa, and I've substituted 1/3 cup Splenda for the sugar. Each serving is about 3/4 cup and 120 calories.

    Seriously. If you're looking for a rich, chocolatey dessert that is about as guilt-free as you can get, this is IT. And I promise you it does NOT taste like tofu!

    couldn't you make it without the food processor? it seems like something that could be wisked?

    It would probably work with an electric mixer, but whisking by hand could take a while. Reckon it's possible though :smile: And definitely worth the effort!

    I had the same thought and tried making it with the hand mixer. No go. The mixture stayed sort of grainy and full of little lumps. Fortunately, I was able to salvage it by transferring it to the food processor.
