I also eat one of these GF muffins as a dessert (I spread a thin layer of jam on them), but they could work for breakfast on the go.
2 large organic free range eggs, separated
1/4 c oil (I used grapeseed oil)
1/2 c honey
1 tbsp vanilla extract
1 tbsp fresh squeezed lemon juice
2 1/2 cups blanched almond flour
1/2 tsp salt
1/2 tsp baking soda
231 cal
17g fat (mostly from the almonds)
7g protein
12g sugar
they were very moist and delicious. I'm going to try to put a little less honey next time to reduce the sugar content.0 -

I always eat 2 eggs with coconut oil, salt and pepper. Very filling. also got into teeccino (fake coffee) lately. It does need some kind of cream or creamer - SO coconut products has one - this is actually filling also. They claim no gluten drips when you make the coffee.0
