No time to comment in detail but have you considered Walden Farms dressings? They've got some really good tasting stuff, all 0 calories, 0 fat, etc.

Ranch lovers rejoice.. This is what I use for my dressing/veggie dip:

1 package firm silken tofu (12.3 oz I think)
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1 generous teaspoon dry dill
    1/4 cup water
2 scant tablespoons apple cider vinegar
1/2 teaspoon stevia (I omit this because I don't like sweet ranch)
2 vegetable bouillon cubes (or 1 of the double ones)
2 tablespoons mayo (I use the Kraft Olive oil mayo)

Put everything into a food processor and blend until it's creamy. (Adjust the garlic and onion powder to taste. I increased mine a little from the original recipe. Also can use veganaise to make this vegan as the original recipe did.)

As I make it with the Kraft olive oil mayo this stuff is 20 calories for about 2 tablespoons and it tastes 500% better than the bottled fat free crap. I swear I fooled my entire family with this stuff, they all thought it was real ranch dressing.

Bolthouse Farms makes REALLY good dressings! I used their Raspberry Merlot Extra Virgin Olive Oil Vinaigrette. It has only 30 calories per 2 tablespoons but it's freaking delicious. I poured it over some mixed baby greens, strawberries, blackberries, and pecans. It would have been made better with some nice goat cheese and maybe some red onions.

Explore different lettuces! Iceberg is so boring! There's romaine, arugala, boston, raddicchio, endive, dandelion greens, kale, mustard and turnip greens! Add eggs, beans, onions, mushrooms, bell peppers, oranges, grapefruit, strawberries, corn, jalepenos, nuts, seeds, avacado, lemon, lime, etc.

As for dressing, do what you like, just use a little bit. Like 1-2 tablespoons. Measure it! If you're adding enough delicious veggies, you won't need very much.

One of my favorite salads is romaine, corn, black beans, chopped cilantro, red onions, a bit of jalepeno, red and yellow bell peppers, avocado, cheddar cheese, pepper, a big squeeze of lime juice and a little bit of full fat buttermillk ranch. Not even a half table spoon. So ****ing delicious.

My favorite dressing is Cardini's Light Greek Vinagerette. It is 50 cal for 2 TBSP and 4.5 g fat. I don't usually even need that much dressing because it has such good flavor. I am not a fan of 'fat free' dressings of any sort, don't like the taste. I agree , I love iceberg lettuce but usually avoid. I use Romaine and spinch mix. Usually sprinkle a little blue cheese or feta cheese for extra flavor. when having just salad I add shaved turkey chopped or chicken diced.

I like salsa for an almost impactless dressing...

otherwise, I make a maple balsamic vinegrette... I think about 60 calories per tbsp.
4 parts olive oil, I part maple syrup, 2 parts balsamic vinegar, Dijon mustard (like 1/2 part or less) or other herbs, salt to taste
