I love it and need to cook with it more often! Usually I just bake or pan fry it with a bit of EVOO and salt. I love the flavor of eggplant... Looking forward to trying some more recipes.0

I like aubergine, as we call it, but that buttermilk/pomegranate recipe I think was just awful! i had it in a restaurant and really wished I'd ordered the brushetta. Ended up pouring off the milk and seeds and just smooshing the aubergine with some pepper.

Love it! I use it as a swap for sausage in my spaghetti. I also use spaghetti squash as a swap for pasta!0

Love it. My favorite is stuffed eggplant. You hollow out the eggplant, chop the pulp and sautee it for about 5-7 minutes, add in half a chopped onion (white, yellow, or sweet but I like white best), one small chopped tomato, and a tablespoon of white wine vinegar. Sautee until most of the liquid is evaporated then stir in as much feta as you like. You can scoop the mixture back into the eggplant shells, into a bell/ pablano pepper, or baking pan. YOu can sprinkle on bread crumbs and Parmesan if you'd like-- I don't as the feta is cheesy enough for me-- and bake at 350 for 10 minutes or so.0

Mmm, the baba ganoush sounded wonderful! I love eggplant parmesan and will have to try grilling slices of eggplant when my garden produces them this summer.0
