    I too make this in the crockpot on Day One, and serve it either over rice or in tortillas. Then I just let the crock cool and put the whole thing back in the refrigerator and on Day Two I add about a quart of chicken broth to what is left over and it is now Chicken Tortilla Soup and we add some avocado, sour cream, etc.

    I made this tonight, and man, it was so delicious!! I had the same problem as some of the others who've made this...it was a bit watery. I'm thinking next time I make this (because I think this will be in regular rotation), I will bake it without the salsa and use that as a topping and see if that makes any difference. We just served it over corn muffins to soak up some of the liquid. A little dab of nonfat Greek yogurt in place of sour cream, and this was just divine. Thank you for posting this!

    I made it for dinner but I cut out the Salsa (people said it was watery and I didn't have any) and I cut out the chillies. I'm not a huge spicy food fan. But I had mushrooms I needed to use so I added that. I made it a bit differently, I drained and rinsed (till it was clear water) the black beans then I mushed them on the bottom of the glass dish. My roomie really doesn't like beans so I'm hoping that mushing them will help with that XD. Then added the corn on a layer, mushrooms on a layer, onions on a layer then I added the chicken (prepared the way it states) then added about half the cheese and some cream cheese (Like a tablespoon worth)

    SOOOO good :) I had a side of corn bread (as someone else had it with as well).

    The key to this dish being less "watery" is using cooked chicken. I bake and shred my chicken first. Watery issue resolved.

    Although, I have to admit - I didn't mind it being watery because it reminds me of the Chicken Enchillada Soup from Atlanta Bread Company.

    Also...this dish freezes and re-heats VERY well.

    I now cook and freeze it about once a week.
