Baked Chicken Chimichangas
I'm making these tonight. Only 380 calories per Chimi.
8oz reduced fat cream cheese (softened)
8oz shredded mexican blend cheese (or cheddar)
2 Tbsp taco seasoning
1 lb cooked chicken, shredded
8 soft tortillas (I use a fat free/high fiber one)
Mix cream cheese, shredded cheese, and taco seasoning. Fold in chicken. Fill tortilla with mixture. Tuck in sides of each tortilla. Lay seam down on greased cookie sheet. Bake at 350 for 15 min. Turn Chimi's over and bake another 15 minutes. Serve with light sour cream, lettuce, or salsa. Serves 8

FYI- made these for dinner last night.... YUM. I liked them better than some that I've had in Mexican restaurants.
I topped mine with some chopped tomatoes, lettuce, salsa, hot sauce and non-fat greek yogurt. I also used canned white chicken since I didn't have time to thaw out and cook chicken breast. Still came out awesome.0 -

Yummo.. thanks for the recipe. I will be trying this soon and will come back to let you know my thoughts. Only difference is I'm going to try out making my own taco seasoning from a recipe I found in a Diabetic Living Cooking Magazine.0

I used the LaBanderita 8 inch taco shell.0 -
Does the cheese mixture leak out when it melts during baking?
No it doesn't. You grease the cookie shee, then you fold the shell in on each side and lay it seam side down. It actually seals it while baking so nothing leaks out.0 -
Made this tonight after seeing the recipe....AMAZING!!!! I added beans and a bit of rice because I needed the calories today....i recommend it if you're craving Mexican...so good!!!!0
