a friend of mine stupidly went onto a 500 calorie a day diet and lost 1.5st in 5 weeks. However last night she freaked out and completely binged. She's gained 6lbs overnight and now shes paniking like crazy.
Im trying to convince her to go onto a 1200 calorie a day diet to sort out her metabolism. Will she gain back the 1.5st she lost if she bumps up to 1200 or should she only gradually increase?

That's 6lbs of food in her belly, it will go away again in a day or two.
She should go straight on to AT LEAST 1,200 calories then gradually increase by 100 cals a week up to what she should actually be eating. Depending on how much she has to lose, she could go with whatever MFP recommends for 1lb a week loss, and eat back any exercise calories.
Alternatively, she can do the sums from this thread and not eat back any exercise calories:

thanks guys i tried to explain the maths lol and that it was impossible for her to gain that overnight but she's just freaked out.
