Mini Quinoa Frittata's

Ingredients
- 1cup water
- 1/2 cup quinoa
- 2egg whites
- 2eggs
- 2/3cup grated zucchini
- 2/3 cup light cheese
- 1/3 cup Diced ham
- 1.5 teaspoons chives

Preheat oven 200c
Put 1/2 cup quinoa and cup water in saucepan bring to boil then reduce to simmer until waters absorbed combine cooked quinoa and other ingredients into a bowl salt and pepper to taste
Spoon into muffin trays
Bake 25-30 mins
Rest for 10mins
Eat hot or cold

Cals- 213
Carbs= 15.5g
Protien=14g
Fat= 10.5g

This made me 8 :) Perfect prep to do if you don't have much time and you need things to grab as you go.

    sounds pretty good, im always looking for quinoa recipes, but have yet to actually try one out

    but are the cals based on 1 cake? or whole recipe?

    must be per serving as 2 eggs alone are almost 200 cals
