Hi, what is everyones chilli recipies?
I told my partner I was gonna make it this weekend & he was not impressed (thinks I can't cook!!!)
So I kinda need to kick his *kitten* and give him a great meal, not that I'm doubting myself!
I'm off to the shop tomorrow to pick everything up.
I'd prefer to make it from as scratch as possible too! Thanks!

I throw all sorts into my chilli's, do a big batch and keep single portions in the freezer. I don't weigh or measure ingredients (have tried to think about it below and the numbers are very 'ish') but always include:
Lean minced beef - 800g
Onion - 1 large
Chopped tomatoes - 1 to 1.5 tins
Kidney Beans - 1 to 1.5 tins
Real chilli's (using the seeds as well) - 5 - 6 small/med red chilli's
Carrots - 3 med to large
Green Beans - half a standard sized bag from the veggie section in the supermarket
Stock cube or those stock gel thingies - 2 cubes or one stock pot
Lazy garlic - depends on taste but use around 2 teaspoons
I use my slow cooker but have a couple of tips that I've learnt over time - always brown your mince and drain off all the excess fat before putting into the slow cooker (or adding the rest of the ingredients) and using real chilli makes the biggest difference in taste (as opposed to using chilli power). Just brown the meat, add the rest and you're cooking on gas. Remember to taste throughout the cooking process and you can adjust flavourings/seasoning as you go.
Don't know if that's of any help at all but am obsessed with cooking from scratch and keeping processed stuff to a minimum - sorry to go on ...0 -
No that is fantastic, it's along the lines of what I was thinking anyhow. But didn't know if people used tin tomatos or tomato puree ect, also wasn't sure if real chillies would be too much. I love hot and spicy food though so that is brilliant.
Can you taste the garlic in the chilli when you use it too? I have most the ingredients you mentioned already so it's a good base to start at!0 -
Hi, tinned toms are fine but if I have some tomatoes left over in the fridge I throw them in as well - feels healthier for some reason You can taste the garlic but this is one of those things that you'll need to adjust to suit your own tastes though and quantity to use also depends on how much chilli you're cooking up.
