2 minute egg sandwich

Here is my Daily breakfast. Feel free to post yours!

Thomas English muffin
2 - eggs
2 - pieces pre cooked bacon
1 - piece 2% milk cheese

385 Calories 27g Carbs 18g Fat 27g Protein = 30/40/30 Macro

Cook eggs in coffee mug = fits perfectly on muffin

45 seconds then 20 seconds. (The egg puffs up in microwave so I need to break it into 2 timed segments)

Toast muffin while eggs are cooking.

Time: 1 minute 5 seconds

Put Bacon into microwave for 25 seconds

While bacon is cooking, put cheese on egg

Once bacon is done cooking cheese = melted

time: 1 minute 30 seconds

remove bacon and wick up the grease

Place bacon on egg

Top of muffin = complete

    That sounds really good! So you just crack the egg into the bottom of the mug and it cooks through in that little time? Do you allow any time between the rounds of egg cooking - like do you leave it in for 30 seconds or something and then restart it?

    I want to try it!

    This morning I had a whole wheat English muffin with peanut/almond/flax/pumpkin seed butter. Yummy!

    I make an egg sandwich like this every day for lunch. I cook my egg in the bottom of a Corelle cereal bowl. It cooks perfectly in exactly 1 minute and slides out fairly easily ;) I top mine with cream cheese and sometimes a piece of lean deli ham

    Just crack and beat them in the dish.
    I don't wait any amout of time between the rounds. Im usually right there, so I just hit 20 and go again

    No. I eat the yolks to bump up my fat to hit my macros. Just adjust the time and it should be ok

    Similar process here but I use whole grain sandwich thins and a piece of canadian bacon and american cheese. 3 egg whites. Comes in at about 200 calories. Add one or more yolks if you like and still have a manageable calorie count. Also it travels well. I take the cooked eggs and other ingredients to work. Egg w/bacon goes in the micro, bread goes in the toaster and cheese added just before eating.

    i rub the bowl/mug w/ a little olive oil first so the egg doesn't stick (once it sticks, its tough to scrub out). also, I like to toast the bread. so for me that would add a minute or 2 (because english muffins take a long time to toast properly. aslo, I add hot sauce or some other condiment. trying to get it as close as possible to the ultimate:
