Recipe ideas anyone?

I have a nice tub of it.. tried a bit this morning and I like it. What else can I do with it?

    If you eat pasta, you can add the cottage cheese to your dishes. When heated it's like a chunky riccota (the cheese layer of lasagne), or you can blend it first and then its almost exactly like riccota.

    You can also try eating it with sliced peaches or sliced pears.

    I liked at fruit to mine... I have been known to add salsa and mix with eggs.

    Oatmeal Cottage Cheese Pancakes
    1/2 cup oatmeal (uncooked)
    1/2 cup cottage cheese
    1 teaspoon vanilla
    4 egg whites

    Blend all ingredients in blender.
    Spray skillet with cooking spray and cook just like"silver dollar" pancakes, a few small ones at a time.

    They freeze really well.... Easy breakfast.

    1 1/2 containers of Whipped cottage cheese
    4 tbsp of powdered peanut butter
    1/4 cup of chopped almonds
    1/2 cup of almond milk any flavor
    3 heaping scoops of chocolate casein protein powder
    Small handful of natural cacao chips
    Dusting of cinnamon

    I like mine fairly plain, with black pepper and chives.

    Also, run it through a blender (or not. . . ) and use it anywhere you'd use sour cream or mayonaisse.

    I like to use it as a dip for raw vegetables or crackers. It's also nice added to scrambled eggs.

    Add some fresh dill or other herbs, blend it so its a little smoother and use it as a veggie dip.

    You can pretty much add it to everything, salad,fruit,eggs,pasta dishes,jelly,anything really. I like it just plain sometimes.. Have fun with it....

    Add a 1/2 cup of it to a smoothie.

    I make this one all the time:
    1/2 cup cottage cheese
    1 scoop flavored protein powder
    About 10 ice cubes
    1/2 cup water
    Whatever other flavoring you like (chocolate chips, almond extract, butterscotch pudding powder, mint, etc.)

    (1) Cottage Cheese Scramble - 1 egg, 1/4 cup egg whites, 1/4 cup cottage cheese, 1 chopped up turkey sausage link, 2 tbl skim milk. Whisk together and fry up like scambled eggs. Yummy and so much protein!

    (2) Mix cottage cheese w/ apple sauce, cinnamon and raisins

    (3) Mix cottage cheese with vegetable soup mix and use as a dip with veggies or pita chips.

    (4) Mix cottage cheese with low fat sour cream, salsa, even black beans and serve hot or cold as a mexican dip.

    (5) Whip cottage cheese with cocoa and splenda for chocolately mousse. Add a little PB2 (powdered peanut butter) for reeses like delight. Eat it cold or put it in the freezer for a little while until it gets a more ice creamy like consitency.

    (6) Blend it up in your smoothies.

    (7) Mix it with your favorite davinci sugar free syrup and fruit.

    (8) Tuna Bake. Mix tuna, light cheese of your choice and cottage cheese together - put in casserole dish - top with some bread crumbs and bake.

    (9) Mix in a little vanilla extract, cinnamon and raisins or craisins and it takes kinda like tapioca or rice pudding.

    10) Dip cottage cheese: onion soup mix, box of frozen spinach, in the food processor. Serve W/ baked tortilla chips

    11) 1.5 cups lowfat cottage cheese (12 oz), 3 1/2 oz of very ripe banana, 2 tsp cocoa, 4 packets of Splenda. Put it all in the food processor and let it go until it is really smooth. Makes 2 good sized servings of about 225 calories each.

    I used to use cottage cheese to make homemade "Reese's Cup"

    Cup of cottage cheese
    couple of tablespoons of Cacao or dark chocolate baking powder
    couple of tablespoons of peanut butter or raw coconut butter

    I don't measure...so these amounts are approx.

    The YUM!

    I found this recipe on the web for you:
    EASY Protein muffins-Cottage cheese, PB, Choc


    INGREDIENTS
    125g rice flour. (the flour I get is white and brown rice flour mixed, I try to avoid all wheat products)
    2 tablespoons cocoa powder.
    1 teaspoon of Baking powder
    1 tub cottage cheese.
    2 tablespoons of nat peanut butter.
    2 teaspoons of honey.
    2 eggs.
    4 squares of really dark chocolate (like 85%) smashed up (optional)



    1. Preheat oven to 180 degrees

    2. Mix the peanut putter, cottage cheese eggs and honey in a bowl.

    3. Mix the flour, cocoa, baking powder in a separate bowl

    4. Combine all ingredients together with a wooden spoon. If mixture is too dry add milk until its think and gloopy.

    5. Put into muffin tins

    6. Put in oven for 15-20 minutes.


    Should make between 10-12 muffins.

    Most people find this odd but I grew up eating this way. I cut up fruit, my favorites being pineapple and peaches and mix it with the cottage cheese. LOVE IT! In fact, I look forward to summertime just so I can enjoy it again. No reason not to eat it year round but it just feels like a summer food to me.
