    Roasted cauliflower is DA BOMB. So good! I like to sprinkle just a little parmesan on it too. Yum.

    I also roast a lot of veggies! I use an olive oil spray to cut on the calories. My roasted cauliflower is a lot less calories!

    Have you ever heard of Romanesca Broccoli??!! It's like Cauliflower and Broccoli had a beautiful baby together. And it looks freakin' cool.

    That's the most beautiful vegetable I've ever seen. I'd be sad eating it and destroying it.

    I've seen cauliflower that's green (supposed to be a cross between the two) but it wasn't anything like this. I want to grow it now as an ornamental!

    Me too!! It might just be to beautiful to eat.........NAH... we can grow more!

    I do roasted veg of every and any variety, but always dry roasted. You don't need any oils or sprays. :tongue:

    I make something similar ... at the end, add 1/4 cup GOOD parmagiano reggiano and 1/4 cup pine nuts and the juice of 1 lemon - DELICIOUS! :)

    I made this last week and it was amazing. I also added a tbsp of Parmesan cheese during the last five minutes of cooking. I couldn't stop eating the bits from the pan :laugh: I roast almost all our veggies now. It adds healthy fat from the olive oil and it is so tasty!

    Thank you for posting this! I made this tonight with an non-stick Olive Oil Spray. Once it was cooked/slightly charred I sprinkled it with a touch of parmesan cheese while still hot (right out of the oven).

    Family hit tonight.

    I think I knocked off some of the calories this way.

    1 head of cauliflower: 210 cals
    Olive Oil Spray: 0 cals
    Parmesan Cheese (4 tbs): 100 cal
    Total: 310
    Divided by four servings: approx: 77 cals
