Canned diced tomatoes
Chipoltle peppers in Adobo sauce
Lime juice
Coriander
Cumin
Salt/pep
I'll also make a little guacamole too ...yummers0 -

            This is how I order my chimichanga's (toppings and sauces on the side not to interfere with crispiness.)

because in my mind the whole point of a chimichanga is that it have a deep fried crispy Crispy CRISPY flour tortilla outer shell. otherwise it's just a burrito, no? but what do I know. it's not like i know anything about mexican food or anything. and before anyone gets all up in arms whether or not a chimichanga is actually mexican I believe a burrito still is & i know me some burritos.

            I made these for dinner last night and they are delicious!! The whole family enjoyed them. With the ingredients I used, it came out to 288 cals per chimi. But I had black beans, sour cream and salsa on the side. The whole meal ended up being about 500 cals.
