Coconut "ice cream" bars

The warm weather has hit... which makes it oh-so-tempting to wander up to the corner store for a fudgesicle. Instead, I made these.

In a blender mix a can of coconut milk and fruit of your choice (I used frozen berries)

Pour into popsicle tray, and put in freezer

Yes, it's really that simple.

I used Aroy-D Coconut Milk, because it only has 2 ingredients: coconut extract, water.
I also used No Name Mixed Berries. Again the ingredient list is simple: Blackberries, blueberries, raspberries.

This made 6 bars, 106 calories each, 4g carbs (3g sugar), 9g fat, 1g protein.

Totally non-dairy, gluten free, refined-sugar free, paleo, vegan, etc... oh, and delicious.

    I have done "shakes" like that.. just coconut milk and berries. Yum. Never thought to freeze them. You're brilliant!

    Do you think almond milk would work? I know coconut milk is really thick, so I'm not sure. I'll probably try anyway :)

    I'm sure almond milk would work too! I think anything that can be turned into a smoothie can be turned into popsicles.

    Oh wow! Definitely going to have to try this recipe and also the variation with the cocoa and raspberries someone suggested. Awesome alternative to the sugary treats one is tempted to eat during hot weather.
