21 calorie lemon lime large fluffy cookies!
These things are a miracle recipe! It makes 6 large fluffy tangy cookies! That means you can eat the whole batch for only 122 calories!
Ingredients:
1/8th cup Plain fat free Greek yogurt. I used Choboni
1 tablespoon quick oats
1/8th cup whole wheat flour
2 tablespoons liquid eggs
1/4 tsp baking soda
1/4 tsp pure vanilla extract
1/8th cup fresh squeezed lemon juice. (About 1 whole lemon)
1 packet Stevia
Pinch of salt
About 3/4ths tablespoon Lime jello gelatin mix. ( I eyeballed this. Use as much as you see fit.)
Directions:
In a seperate bowl, combine yogurt, eggs, and lemon juice. Mix well.
In another bowl, combine the remaining dry ingredients. Mix well.
Finally, combine the dry ingredients with the wet and mix. The batter should fluff up and be really tangy to the taste due to the lemon and baking soda. Don't worry, that extreme tangy ness bakes out.
On a sprayed pan, make your 6 cookies. Go ahead and make them the shape you please. The spread a little, but not a lot.
Bake on 400 for about 6 minutes or when they are springy to the touch and come out clean with a toothpick.
I figured I would share this recipe when I was already two cookies in a still eating! So sorry for the half eaten cookie in the picture!
