Hi!
I made an amazing quinoa salad for lunch today!! Here's what I put in it:
-1/2 boiled quinoa, cold
-60g of steamed salmon, cold
-half an orange mini bell pepper, diced
-half a roma tomato, diced
-2 baby carrots, sliced
-6 green grapes, cut in half
-half a slice of canned pineapple, diced
-4 steamed asparagus spears, cut
And I made a dressing with a tablespoon of fat-free plain yogurt, a tablespoon of apple cider vinegar and a teaspoon of liquid honey. Add salt and pepper to taste. DELICIOUS, filling and only 313 calories! With 20g of protein Try it!!0 -
My mom puts orange juice, orange pieces (or other citrus like those canned clementines), cranberries (fried ones), some nuts and oil (pretty much any, just not olive oil, it's too strong). You can add onions, salt, pepper, anything you like really.
Imagine a couscous recipe, replace couscous with quinoa.0 -

I make a quinoa salad that is essentially Tabouli (or Tabbouleh or however you spell it) with quinoa instead of the bulgur wheat.
Ingredients
1 cup water
1 cup fine cracked wheat (OR quinoa)
1 cup minced fresh parsley leaves
1/2 cup minced fresh mint leaves
1/2 cup finely chopped yellow onion
3 tomatoes, diced
2 cucumbers, seeded and diced
3 tablespoons olive oil
3 tablespoons lemon juice, or to taste
1 teaspoons sea salt
Directions
Cook the quinoa and set aside to cool. Add the chopped herbs and vegetables and toss with the mix. Combine the oil, lemon juice, and salt in a separate bowl. Add to quinoa and mix well. Chill.
ETA It's even better with some feta cheese in it!0 -
not a recipe but a great tip from a chef. toast quinoa in a baking sheet at 350 until golden and toasted. Then proceed wih pkg directions. He said this is why resteraunt quinoa tastes so flavorful they toast it then cook as needed.. I agree everything tastes better when roasted a bit.0
