Egg white/spinach/pepper muffins

I make a batch of these to keep in the fridge so I have a quick and easy snack. Top with some salsa and voila!

Ingredients:
1.5-2 smaller sized containers of egg whites
Pam or some other spray
1/2 pepper
1/4 onion
Seasoning of choice- I like Mrs Dash Chipotle
However much spinach you want

Preheat oven to 350. Spray muffin pan with PAM or some other non stick spray. Shred up spinach and place in bottom, add in chopped onion & pepper, sprinkle seasoning of your choice on top.

Pour in egg whites to top of muffin tin.

Bake for approx 20 mins or until they're the consistency that you want. Let cool on a wire rack. They keep well in the fridge for up to a week.

    I really like the taste, especially with sugar free salsa on top. For seasonings i'll use either Mrs Dash Southwest Chipotle or FIesta Lime which adds some extra kick to them.

    Edit: The nutritional breakdown I have is as follows (please correct me, OP, if you have different):

    2 x 16-oz containers of All Whites egg whites (or 64 Tbsp) 533 calories
    1/2 large red bell pepper, 23 calories
    1/4 white onion, 11 calories
    1 cup spinach, 7 calories

    Total per serving (serves 12): 48 calories, 1g carb, 0g fat, 9g protein, 0mg cholesterol
