Advide for healthy clean snacks for trip

I am chaperoning a 3 day field trip to NYC in a few days. Very exciting, but the trip has been designed for a bunch of teenagers--stops at pizzerias, diners, etc. We will also be on the go for 14 hours a day. The last part is good for an effort in healthy living.

So, as I'm packing, I'm thinking of healthy, nutritious snacks to take. I've made trail mix with almonds and dried fruit. I've made homemade protein bars (mashed bananas, natural peanut butter, oats, etc), clean banana muffins (I bought bananas in bulk this weekend! I also know I can bring a few apples and oranges.

I know I"m good on fruit, whole grains, and protein. But I don' t know what to do for vegetables. I can't really take a cooler because I'm with a large group. I doubt the hotel has a fridge to keep raw, cut veggies.

Does anybody have any healthy, clean, non-parishable vegetable rich snack recipes that I can make, store in a bag, and eat on the go?
