I was looking at the recipe and wondering the same thing about being able to make it gluten-free!!
Ingredients:
1/8th cup Plain fat free Greek yogurt. I used Choboni
1 tablespoon quick oats
1/8th cup whole wheat flour - (I'm betting coconut flour would work here and for the quick oats)
2 tablespoons liquid eggs
1/4 tsp baking soda
1/4 tsp pure vanilla extract
1/8th cup fresh squeezed lemon juice. (About 1 whole lemon)
1 packet Stevia
Pinch of salt
About 3/4ths tablespoon Lime jello gelatin mix. ( I eyeballed this. Use as much as you see fit.) ((Yes, gluten free))
Any other gluten/grain free peeps here? I'm brand new to it so just feeling my way. Would that work?0 -

If you use coconut flour you may need to increase the liquids as coconut flour is pretty thirsty. I usually sub oat flour for wheat flour.0 -

I make an iced lemon protein bar and you could probably use the same icing for the cookies:
14 g Coconut oil
60 g Fat Free Cream Cheese
26 g Truvia - powdered in a coffee grinder(or 1/2 cup powdered sugar)
1/2 tsp vanilla extract
In a glass measuring cup melt coconut oil and cream cheese in the microwave for 30 seconds, wisk together for about a minute, its ok if they are not smooth yet. Heat an additional 30 seconds, add powdered truvia and wisk until smooth and creamy. Add vanilla extract and wisk again until combined. Drizzle over cookies.
This recipe is for 8 protein bars, you could probably half it for the cookies.
The icing will add approximately 160 additional calories.0 -
