Thanks for the recipes! Do you have calorie info.? Maybe they're in the database? Do you store these in the frig and how long do they stay fresh?0 -
Here's a recipe I was given about a month ago. They taste like cookies and my husband asks for them just about EVERY day!
- 2/3 C. nuts (I use walnuts, almonds and cashews)
- 1/3 C. dry oatmeal
- 3 Tbsp. maple syrup ( or half agave and half maple syrup)
- 1 tsp. vanilla extract
- 1/4 C. dried fruit like cherries and blueberries (I've never tried it w/any other kind but you could be adventurous) or chocolate chips (or both fruit and chocolate chips)
Place nuts and dry oatmeal in a food processor and blend for a few minutes. Add maple syrup and vanilla and blend again briefly. Add dried fruit and/or chocolate chips and blend once more.
The mixture will ball up at this point. You're done! Eat at this point or prepare and place in the freezer. I either make tiny balls with the mixture or put it in a plastic bag, roll flat and put it in the freezer. This way, it's easy to break off a piece when I want a little "pick-me-up".
Hope you like them! Good luck! :flowerforyou:0 -

I make a batch of steel cut oats using the overnight method and put them in the fridge. Scoop out a portion in the am nuke it with some cinn and nutmeg and splenda. I make a batch every 4 days or so. While the oatmeal is in the microwave I peel 2 hard boiled eggs to go with. Good carbs, protein, quick and filling.
If out of the steel cut oats I use regular old fashioned oats, 1/2C with 1/2C water, cinn, nutmeg and splenda... 110 seconds in the nuke. Makes it chewy rather than soupy.0 -
any nutritional info on these?0
