just made this bad boy gluten free banana cake! super easy and low in sugar!

200 grams Self rising flour
1/2 cup of stevia
1 egg
2 med banana
110 grams of unsweetened apple sauce
teaspoon of vanilla
1/4 skim milk

Whisk wet ingredients to light and fluffy, then fold in mashed banana and flour. A pour in a greased cake tin, it will be quite a thick mixture so spread it out evenly with a spoon. bake at 180 degrees for about 40mins.

I got 128 cals, 27 carbs 1 fat 2 protein 1 fiber 4 sugar

Its quite a flat cake so if you wanted to double the recipe you could to make it thicker but keeping in mind it would take longer to bake etc etc

enjoy

LOL sorry wasn't bringing up raising or rising. Just wanted to know what brand you used. I think it is self-rising and not self-raising.

whats with people and frosting?! Not everything needs it. That's how people Put on weight to start with!

    1. I was trying to save on cals, Adding frosting would up them again.
    2. Its Gluten free and sugar free hence the pale colour
    3. I do not like frosting

We use the same in Europe... not sure why they are questioning it?

Thanks for sharing this, and no, it doesn't look good but a lot of the best tasting stuff can look awful sometimes ;)

Yes i do agree i wasn't showing it because of the way it looked it was more the thickness hence the side shot, I also struggle to find easy gluten baking recipes. so i was pretty happy that it tasted good!

I actually think it looks really great? But I prefer banana cakes etc to things with tons of frosting usually.

    HAHAHAHA!!! Thanks for the laugh!

    Where's the frosting.... hahaha...

Few things say eating healthy quite like frosting does. ;)

I'll have to keep my eye out for self-rising flour. :)

She means: "Yes," it's 180 celcius. (Aussies use celcius, fyi)

Just looked up self-rising flour, and you can make an at home version:

    3/4 cup all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon salt

    Directions:

    1
Combine all ingredients and use in place of self rising flour.
    2
May double or triple if more is needed.

Is this based on 1/8th of the cake, as the pic suggests?

I'd like to make something banana-ey today and remembered this recipe! :)
