Hi There!:happy:

I am not a Vegetarian but some days my protein is very high so for Dinner I make something with just Veggies. I'm looking for something yummy to do on those days. I'm basically steaming veggies and tossing a TBSP of butter in them. If you have anything you might want to share I would be most Grateful!

    I have a Mediterranean Chicken recipe that I bet would be fairly yummy even without the chicken. And it's super simple. Dice the chicken and brown it, dump a 15oz can of diced tomatoes in the pan and finish cooking it. To go vegetarian, just warm up the diced tomatoes in a saucepan. Sometimes I add some Italian seasonings while the tomatoes simmer. Steam a package of frozen spinach and prepare a box of parmesan cous cous according to the box directions. To serve, layer the cous cous, tomatoes, spinach and tomato/basil flavored feta cheese on a plate. I serve it with some garlic bread to finish out the meal. Viola!

    Most of my veggie meals contain a lot of protein because I don't eat enough (I'm not vegetarian, but I don't eat much meat and I love veggies), but there are so many ways to prepare just veg. I roast a lot- brussel sprouts, broccoli, cauliflower, carrots, cabbage etc. (basically anything hardy.) Just chop, toss with some olive oil and seasonings and put in the oven at 350ish and check after 10 minutes and go from there. It's amazing. Pair with some brown rice or quinoa or something.

    This is a Breakfast Recipe. You can modify it however you like as it has almost no calories.

    2 oz Lightlife Gimme Lean Ground Beef Style Veggie

    6 TBSP (1/3 cup) Hail Paul's All White 100% Liquid Egg Whites

    Salt & Pepper to taste.

    Whatever veggies you like. I chop up a large slice of onion to add to mine.

    I cook the Ground Beef Style Veggie in a pan with the onion's in a little bit of olive oil fist. The Egg mix will cook almost instantly so don't add it until the very end.

    The meal is appx.

    Cals: 110

    Protein: 18grams

    Cholesterol: 0

    I just realized you weren't looking for more protein in your diet. It's something a lot of us vegetarians have a hard time meeting. Are you looking to get more fiber in your diet?

    If you are maxing out your protein then I wouldn't look for vegetarian recipes unless you plan on substituting some of your protein packed meals for ours. Is that something you're willing to do?

    If not, what you need to do is just eat more veggies. I wouldn't add anything that has extra protein. I usually just add salt and pepper to some steamed veg. Tomatoes or cucumbers (fruit, I know) with some added vinegar is also really good. I do the same with a bag of spinach, yes an entire bag of spinach. I add salt, pepper, and vinegar. You can also have canned spinach. To the canned I never add salt just some pepper, and you can warm it up in a pan with some onions for some extra flavor.

    I sometimes saute mushroom and onions, add that to some fresh raw spinach, and then add either a fried or poached egg on top. The egg yolk is what I use as the dressing, but I'm sure you could add some vinegar here as well if you please. Once again, I add some more flavor with salt and pepper.
