Spagetti Squash...Yay or Nay?

Love it, but mine always comes out too watery for use with spaghetti. My favorite way is baked till almost done, scarped out and then sauteed with fresh garlic and butter.0

I love when I make spaghetti using squash....I also use ground turkey or chicken....It has a bit of a crunch texture but sooooo good...my kids really like it too!0

I have it all the time and love it as an alternative to pasta. It's not expensive, so my advice is buy one and bake it - if you don't like it, throw it out and you're only out a few dollars, but my instincts say you will like it. Very good with pasta sauce and some grated cheese.0

Love it. Don't view it as pasta otherwise you'll get thrown off by the taste at first. I just put with some ragu sauce, garlic, and red pepper and part skim moz. Tastes great.0

As long as I don't try to pretend it's pasta, it's fine. Fairly sweet like most cucurbits and the texture is fun.0

One of my most favorite lunches consists of 1 cup of spaghetti squash, 1 tbsp butter, 2 tbsp grated parmesan, salt & pepper. This is so good, and only about 190 calories. :bigsmile:0

There is a spaghetti squash entree at the restaurant Ruby Tuesday if you want to try it out before you make it! I've had it before without the parmesan cheese that they sprinkle on (just ask them to leave it off if you want).0

I love it, but not everyone does. To me the best way to make it is split it in half (which is the worse part - if you have one of those pumpkin carving kits - use the serrated knife from that - much easier) and scoop out the seeds. Place cut side down in large roasting pan, pour in about 1-2" of boiling water and add fresh garlic cloves to the water (it infuses garlic flavor while it bakes). Roast approx 1 hour at 350 (depending on the size of your squash) and scoop out with a fork - I like to mash in the garlic afterwards & just add some tomato sauce, or sauteed veggies on top. Yummy! I think I might make this tonight for dinner.0
