Sweet and Sour Chicken - from China

I live in China with my husband and baby and have lost over 20lbs since being here because all their foods are vegetable based and healthy (if you control yourself) lol. This is a recipie from my 'ayi'. My baby is almost 2 and we have a personal CHinese baby sitter, actually one of my students grandma's. She has taught me several recipies and this is my favourite and its so easy!!!!
Ingredients
boiled chicken and bell peppers, or whatever you like onions, eggplant, just boiled. 1 breast for 1 - 2 people depends if you want more.
half a cup of sugar, i do half splenda half sugar.
1 cup of black vinegar (regular vinegar
10 garlic cloves smashed and chopped
half a leek sliced
1 knob of ginger choped in about 3 or 4 5mm slices (leave the skin on, you wont eat it)
1 tbps soy sauce
1 tbps oil
1 tbsp flour and and enough water for it to be like milk. i would say this makes a fluid thats about 1/4 cup.
1. heat oil in pan. fry the garlic, ginger, leek together for 30 seconds on high heat. careful not to burn, you have to keep stirring it.
2. quickly add sugar and stir stir stir, it will caramalise. once its syrupee add the vinegar, might start bubbling and making noise.
3. add soy sauce.
4. add meat and veg
5. add flour and water mix. and stir for 1 or 2 minutes till sauce thickens.
6 eat.
MAKE SURE YOU SLICE THE BREAST INTO THIN STRIPS, I GOT ABOUT 15 STRIPS OUT OF MINE.
THE CALORIES IF YOU EAT ALL THE SAUCE IS ABOUT 450 CAL, BUT IF YOU PUT IT IN A BOWL AND USE AND FOR OR CHOPSTICKS TO EAT, YOU WONT BE EATING MUCH OF THE SAUCE SO ID SAY PROBABLE 200 CAL, BECAUSE MOST OF THE CAL IS IN THE OIL. THATS WHAT I DO, I EAT THIS WITH A PIECE OF STEAMED BREAD. INFACT AFTER I HAVE EATEN ALL THE MEAT, BASICALLY THE WHOLE SAUCE IS LEFT IN BOWL, SO I BOIL UP SOME MORE CHICKEN AND PUT IT IN AND EAT THE SAME THING. I DONT END UP EATING THE SAUCE, BUT IT LIGHTLY COAT ON THE CHICKEN IS WHAT STOPS ME CRAVING.

PLEASE READ
the flour and water mixture is, 1 tbsp flor and enough water about 2tbsp to make it like double cream, add 1 tbsp of this mixture at the first and see how thick the sauce is, it should drip from the spoon but be guey like a syrup. dont add any more.
at the beggining, heat the wok dry, dont be scared unless your wok or pan is realy crap lol. add the oil and swirl it around. when you add the garlic and stuff, keep stirring, dont be scared either lol i was at the beggining.
OH YEAH, ITS NOT RED LIKE MOST SWEET AND SOUR CHICKENS.0 -
