omg, love 'em. my fav way is to make a salad with cubed avocado, chopped fresh tomato, red onion, corn, fresh cilantro, garlic, lime juice, and salt and pepper. sooo good, it rarely even makes it onto plates in the house. they see me making it and get spoons out and just gather around the bowl.
i also slice it up and put it on blue corn and flax seed tortillas. spread some red pepper hummus on the tortilla, toss on a few spinach leaves, some sliced mushroom and onion, half an avocado, some chopped tomato, and a few calamata olives. it's an absolutely beautiful and delicious meal.
will absolutely have to try the tuna salad idea!0 -

LOVE avocados! I add them to a lot of my salads - it's nice because you don't even need dressing because they're so creamy! I also made a pasta"sauce" from them this week - it was DELICIOUS!
Blend up 1 avocado, 1 clove of garlic, 1 tbs olive oil, juice of 1/2 a lemon, salt & pepper in a food processor til it's smooth! Makes an AWESOME sauce! I served it with WW spaghetti, roasted grape tomatoes, toasted pine nuts, pan seared shrimp and a sprinkle of parmesean. So. Very. Delicious!0 -
I have recently discovered I love avacados also!!! In fact, I cut some up this morning and just put some salt and pepper on them (about 1/2 avocado) today for a snack here at work. I love it!! Like some have mentioned here, there are people who have told me they are too high in fat/calories etc. But, I figure if I do it in moderation, it's okay....I hope. I am liking many of the comments here as I feel better abount my new love of avocados :flowerforyou:0

When I have tuna I use a half of an avocado in place of mayo, tastes quite yummy

My favorite dressings:
1 Avocado
1 clove garlic
2 tbsp rice wine vinegar
1 tbsp coarse seeded mustard
2 cubes of Dorot frozen basil = 2 tsp. of fresh
1 Avocado
1/4 c almond milk
1 to 2 tbsp. of hidden valley ranch powder
1 Avocado
1/2 c artichoke heart (canned in water drained)
3 tbsp. water
3 tbsp. Parmesan cheese
You can thin them out if too thick with a little water, or up the vinegar (or lower it if you like).
I zip them all in my blender

I love the baked eggs in half of an avocado with ground pepper and a tiny sprinkling of grated parmesan cheese. I'm going to have to try to replace the mayo with avocado the next time I make tuna or egg salad. Sounds so yummy!0

I make an avocado smoothie.
1/2 - whole medium avocado
1 cup Silk coconut milk or fat free milk (or whatever milk you choose)
1 scoop vanilla protein powder
1 Tbsp ground Flax seed
1/2 Tbsp Agave

My Favorite salad w/ avocado in it!
I will take a 4oz. wild yellow fin tuna steak press it into sesame seed, a little salt and pepper. warm a skillet brown it 4 min. on each side (so it is very rare in the center)
I will slice the tuna up, and slice 1/2 an avocado. place them on a bed of 2 cups of baby Arugula (peppery in flavor), or watercress (so yummy). Crack some pepper over it, drizzle olive oil on and gobble it down!

Ditto! I think I have about half an avocado a day. In my banana avocado smoothies (I cup OJ, 1 banana, half an avocado, 1/4 cup yogurt...I prefer Greek vanilla yogurt,and ground flax seeds, and ice), on my scrambled eggs, in tuna, on top of my tofu scramble. I could go on and on.0

1 cup of papaya (i cut it up and freeze it)
1/2 avocado
3 tbsp Hemp protein shake vanilla (Nutiva)
1 c almond milk

I love avocado raw with salt, pepper and maybe a little balsamic or something in the middle. But mostly I just scoop them out of the skin with my fingers and do naughty things to them with my mouth. >.< Okay, thats an exaggeration but still....I love avocados.0

I love avocados!!!! New to loving them, but I have tried them in chicken salad (yum!) and I also like to put them on my chicken quesadillas. So tasty with a bit of crumbled bacon, green onions, spicy chicken, and cheese.0

I like it with salt and pepper. Guacamole is amazing too. I made a avocado shake a few days ago. 1 avacado, honey, milk and ice. It was actually really good. I put it on sandwiches, in wraps and on salads.0

I use them all the time...sliced up on my salads, on my sandwiches (great on a turkey sandwich) I love them on a burger, use them in place of mayo, loves them in my scrambled egges with fresh cut up tomatoes and some pepper! Delicious! One of my favs for sure!0

i just saw something on FB, where you slice one in half, take out the pit, hollow out that hole a bit more, and crack an egg into the hole. Bake it until the egg is done to your desired doneness. You can put some cayenne on it, prior to baking, or some cheese or something like that.
i find avocados a bit slimy, myself.0
