Make a vegetable soup.0

I just slice mine up and sautee with either a light butter or canola oil. dash of salt and perfect.0
-
make soup or microwave0

Depending on the squash, I like to slice it and fry in olive oil and garlic; you can also throw in some bell peppers, mushrooms, onions, what-have-you on hand as well.0
-
Chilli with kidney beans or curry with red lentils.0

I picked 6 yellow squash from the garden. Would love some recipes. I usually will saute them.
Thanks!0 -
marinate then in italian dressing for a few hours then cook then on medium heat, (until tender) in a fry pan with some salt and pepper - so yummy!0

I like it sautée/fried with onions....for a long, long, long time. I mean until it turns a little brown long, long, long time over medium heat.0

This sounds yummy! I might give it a try myself! Thanks!0 -
saute yellow squash, zucchini, pearl onions, tomatos, use garlic or chili powder or whatever seasoning you like. sprinkle with just a touch of reduced fat parmesan...yum!!0

Zucchini Squash sliced. Need no butter or oil. Just saute it on medium with some Lawry's Salt on both sides. Wait until it browns on both sides as it will sear the juices inside (like a good steak).
Realy healthy. REALLY delicious! I can eat 4 Zucchini's this way.
Yellow squash works, too but I prefer the zucchini.0 -
Yes, slice up a Sweet Onion in there if you want to but the zucchini alone is enough for me.0
-
spagetti squash in the microwave-10 minutes and eat with a little spray on butter and pepper-delicious0
-
Sautéed or grilled are my favorite ways to prepare summer squash like zucchinis or yellow squash.0

I second the suggestion to season and sautee. If you use the right seasoning and the right amount, you won't miss the bisquick Oh, and if you get the pan nice and hot and get a good sear on it it's even better!!
Another thing to do is dice it up (yellow squash and/or zucchini) and use it in minestrone. YUM0 -
marinate then in italian dressing for a few hours then ...
I didn't think I like squash or zuchinni. Went to my Dad's house and he had them marinating in some homemade organic "italian" dressing, delicious.0 -
for squash like zucchini and yellow squash, it's good just sauteed with a can of dices tomatoes and whatever type of seasonings you like. they are also really good "stir fried" with carrots, onions, mushrooms, etc and use some of the herb flavored marinades that are out there for the sauce.0

I like making a butternut squash gratin. I use the oven but you should be able to use a stove as well.
16 oz butternut squash
1 cup chopped leeks (onions make a good substitute)
1 teaspoon butter
3 eggs
1 teaspoon stevia
Peel and cube the squash. Place the cubes in a pan large saucepan and cover with water and boil until it becomes soft (like you would with potatoes). While the squash cooks, melt butter in a pan and brown the leeks and then remove from the heat. Once the squash is cooked, drain, mash and add salt and pepper to taste. Mix in the leeks, eggs, and stevia. At this point, I would usually put them in the oven but you can cover and cook on the stove over medium-high heat until the eggs cook (maybe 10 minutes). As is, it makes about 6 servings and it only about 80 calories a serving is my recipe calculator is right. If you prefer it creamier, you can add in some milk with the eggs. You can also add in some bacon, sausage, cheese, and/or bread crumbs over the top (I do that for my boyfriend's serving).
You could also sautee butternut squash sage, rosemary, & bay leaves with a little olive oil, salt, and pepper until tender.0 -
I do not have a oven to cook in only one my electric stove, anyone know how to cook Squash that is healthy? I was going to cook it the way my mother always made it but me and my gf trying eat healthy she doesn't want to cook it with Bisquick
Thanks
Here is one of my favorite meals, lentils with butternut squash (or acorn or other winter squash, but butternut is best), brown rice and steamed kale.
Chop up one butternut squash into bite-sized pieces
Put one cup of dried lentils and the squash in a large soup pot, cover everything with water, and bring to a boil. Lower the heat to a simmer, cover, and cook about 30 minutes or until done.
Serve with brown rice and steamed kale. Steam the kale about 1 minute or less. You can add it to the top of the beans and squash, cover, and steam that way, or separately.
Season at the table with Tamari or other soy sauce to taste and with toasted/dry-roasted sesame seeds.
One cup of dried lentils makes 2 cups cooked. Adjust depending on how many servings you want. I'm crazy about lentils because one cup has the protein of 3 eggs with no cholesterol. You also don't have to soak them beforehand.0 -
Thanks! I am going to marinade some and then saute with mushrooms0
-
I like to saute them then add scrambled eggs. My kids love it as well0

^^ This... with some potatoes. Yummy!!!0 -
I agree with microwave, steamed acorn or butternut squash is delicious by itself!0

If you're talking about winter squash - butternut, buttercup, acorn, etc - that can be peeled, cut up and either boiled, steamed or sauteed on the stove top. You can eater eat it in chunks or mash like potates. Spaghetti squash is different but can be easily cooked in the microwave.
If you're talking about summer squash - yellow crookneck, zucchini (courgette) - those are great sauteed on the stove top with a little olive oil and spices. The peeling is very soft so you can just wash it and leave it on, half peel ( in strips) or completely peel, it's up to you. They also work wonderfully in a spaghetti sauce or pretty much anything with tomatoes in it. I also like them in cold salads (lettuce or pasta). You can even grate them and use them in soup or breads or even quiche. Very versatile as they don't have much a taste on their own but add bulk and nutrients.0 -
This is a recipe for the stovetop.
Onion
Yellow and Zucchini Squash
Can of Diced Tomatos
Olive Oil
Salt and Pepper
Boneless Skinless Chicken Breast
Heat the olive oil over medium. Chop the onion and saute until it is tender.
Cube the chicken and toss it in the pan, brown the chicken
Slice the squash and add it next.
Add the can of tomatos (don't drain the liquid)
Salt and pepper to taste
Cover and let it simmer on medium-low for 20-25 minutes
Goes great on top of long grain rice or quinoa. Best part is there are only 2 pots to clean!0 -
Hello
If you have a sweet tooth trying cutting it in half, spooning in suckers sugar free strawberry jam, maybe a few tablespoons per chunk, add some stevia wwhich is zero calories, spray with I can't believe it is butter and throw some cinnamon on top, put some water in a pot, place on stove top, cover, cook slowly for a few hours.0 -
I have always peeled & chopped it, then boil it on the stove, then season to taste.0

SORRY! Posted this reply to the wrong post. It's for eggplant, not squash.
Found a delicious recipe on William-Sonoma for Eggplant Involtini. I made it with reduced fat ricotta cheese, reduced fat mozarella and no salt tomato sauce. Absolutely amazing.
