I have a serious baking obsession. If I'm happy, I bake. If I'm sad, I bake. If I get bored, I bake. When I bake, I bake.
If I love you, I bake for you.
It's how I show I care.
This is extraordinarily difficult when trying to be on a limited caloric intake and when watching sugar, salt, and carb intake.
I'm looking for healthy, delicious, confectionery options. It's silly for me to say, "Yeah, I want to lose >100 lbs, let me bake you a chocolate-chocolate fudgey cake."
If I love you, I bake for you.

As for alternative baking, you could try baking using protein powders. There's all sorts of recipes for foods ranging from protein bars and flapjacks to pizzas and breads (some are utterly disgusting though). It's a very different kind of baking though, as you can't cook whey powders at high temperatures, but perhaps it's worth a shot? One website offering free protein powder recipes is www.proteinpow.com

Pinterest.com has helped me a great deal. When you go on, there is a search box. Type in recipe substitutions and it will come up with everything possible. Check Amazon.com and search for no-sodium baking powder and soda. Around $7.00 each, but how much do you really use at a time. Definitely using it for christmas baking. On Pinterest, search for vegan recipes. They cut back on sugars, fats, etc. Don't use weight watcher recipes. They go by calories and don't count salt and other things. WARNING: Once you check out Pinterest, it will be addicting. I check every day for new recipes.0

Have you looked at any recipes on http://chocolatecoveredkatie.com ? She tries to make desserts a bit healthier. I've only tried some of the single lady desserts and the fudge babies (made these today and they are soooo yummy!! dates-walnuts-cocoa powder) I'm not a huge baker, but I do like to make things once in a while.
If anything, maybe it can give you some ideas!0 -

^I'm thinking something along the above lines that joe said. But also with almond flours and whole wheat flours it's like you have all this background baking experience that can be really well applied to tinkering with all the fat and moisture subsitutes people suggest for all the different types of diets they are on. You can explore whether applesauce really replaces oil as a binder and moistener. Whether a little dark chocolate is a tasty enough substitute for milk chocolate. Whether almond flour or whole wheat flour can produce a light and delicate cake.
It seems like a fun adventure. I like to bake and cook. So for me it was fun and interesting when I met my husband who was then a vegetarian and knowing he liked certain foods I tinkered with the recipes I knew so he could enjoy the flavors within his limits.
I think a good place to start would be to use the "search" button in the "recipes" topic with the key word "bake". also look on other sites that are about "gluten free" a specific diet, or etc.0 -
Can you bake and give it away? My husband is part of a baking group at work. Every week someone brings in a home baked treat. This way he gets to bake, but, doesn't have the temptation around the house.0

If you love to bake there are endless options of good foods that can be baked and still be satisfying. I've converted many of our family favorites to healthier options quite easily. For example I've made no sugar no fat muffins using egg beaters, sweet fruits, or sugar free vanilla syrup, etc. I've also make a similiar recipe using oatmeal that I make into healthy breakfast cookies my kids often took to school. When their friends tasted them they declared them the best oatmeal cookies they had ever tasted and always asked my kids to bring extras to share. Sometimes we still have the full fat & sugar versions of some things because we prefer them that way. But many of the substitutions have created results that satisfies everyone to the point that we actually prefer the low calorie version more. The blessing of being a great baker is you have complete control of what ingredients give you the most pleasure. For example if I make sugar/fat free double chocolate muffins I use cocoa and place a few chips in the batter and carefully place 6 chips on top of each muffin because it satifies me more than having them hidden in the batter. If there is a specific recipe you are needing send me a message and I will try to help you out. I am just beginning to post recipes on a blog but do not have too many yet. I am a bit obsessed with delevoping tasty culinary creations that make the most out of every calorie and still fit into my healthy diet plans. For me the key to my weightloss and a healthy diet is the simple fact that I cook and bake regularly so don't think for a moment that you need to give up your passion in any way shape or form.0

Baking your own stuff has its advantages,you know exactly what you put into it,no artificial anything,you can decide the size of your portions,you do not have to eat the whole lot!when I make dessert which is a special treat in our house we dont have it after lunch,we have it as a substitute for our evening meal!so freshly baked Apple crumble,fresh custard and cream would replace the usual meal so nobody really over eats and it will fill anyone for hours!!!!
I bake flapjacks for school with sesame seeds,sunflower seeds pumpkin seeds oatmeal ect,everyone loves them I divide them so there about 105 cals per biscuit!0 -

Ps. Try raw or 'no bake' recipes that fill the need to bake minus the oven time Eg. Today I made amazing raw chocolate brownies.. Pretty much combine 1 cup nuts, 1 cup dates, vanilla, raw cacao or cocoa powder, cinnamon and blend for the base. Then for frosting coconut oil, syrup (honey, rice malt, maple etc) and more raw cacao or cocoa powder. Refrigerate.. Doneski! Healthy brownies made primarily with nuts and dates!0

PPS.. The basics for healthy baking include substituting wheat flour for spelt flour, oat flour or almond meal, sugar for stevia/natvia/honey/rice malt syrup/pure maple syrup, egg for flax meal or chia seeds, oil for unsweetened apple sauce/mashed banana or coconut oil. Chickpeas and black beans are also miraculous kitchen wonders in the world of baking!0

Amazing Black Bean Brownie Recipe
By Cheryl Spitzer, Nutritional Therapy Practitioner
4 ounces unsweetened chocolate (85% dark is wonderful!)
1 cup butter
2 cups soft-cooked black beans, drained well
1 cup walnuts, chopped (optional)
1 tablespoon vanilla extract
¼ teaspoon sea salt
4 large eggs
1½ cups pure maple syrup or yacon syrup (which is low-glycemic and has healing properties)
1/2 cup of hazelnut flour
Preheat the oven to 325°F. Butter an 11- by 18-inch baking pan.
Melt the chocolate and butter together and stir to melt the chocolate completely. Put beans and butter/chocolate mixture in a food processor to blend. The batter should be thick and the beans smooth.
Add rest of ingredients. Beat until well blended.
Bake for 40 minutes, until the brownies are set. Let cool in the pan completely before cutting into squares. (They will be soft until refrigerated - preferably overnight)
Makes 45 (2-inch) brownies.0 -
Maple Pecan Cupcakes
(Not sure who created this - otherwise I would acknowledge them here.)
For the cupcakes:
1/2 cup coconut flour
1 Tbsp. arrowroot powder
1/4 tsp. sea salt
1/2 tsp. baking soda
4 eggs
1/2 cup grade B maple syrup
1 Tbsp. vanilla extract
For the frosting:
1 cup heavy whipping cream
1 1/2 Tbsp. maple syrup
1/2 tsp. vanilla extract
1/3 c. pecan pieces
Instructions:
1. Preheat oven to 350 degrees.
2. Stuff 8 muffin cups with liners.
3. Combine all the cupcake ingredients, beating for about 2 minutes. Spoon into the cupcake liners and bake about 20 minutes or until a toothpick comes out clean when you check the cupcakes. Cool in pan for about an hour.
4. Whip all frosting ingredients except for pecan pieces. Spoon onto cupcakes and sprinkle pecans on top.

As a former bread baker, I hear you! When I started eating lower-carb, I concentrated on learning how to prepare tasty new (to me!) meat entrees (several favorites are from Julia Child's French Cooking). I invested in some good cookware (not totally necessary), and now I really get a kick out of cooking completely from scratch, something that took a backseat when I had kids at home (but I could have and should have done it anyway!).0

I love to bake as well. Fortunately I have a large family so I always have someone to give it to. Usually I get requests from family members. Just made my mom a Key Lime pie.0

I agree - bumping for later - however bake and give away - it satisfies your baking passion and then you dont' have it hanging around. Bring it to work, your hair stylist, even check-in with neighbors or senior centers to see if they would enjoy your goodies!
