Healthy meal ideas

OK, so I have been on a diet for just over 2 months now, and it's going great, BUT, I would love to receive more ideas for more healthy meal ideas!

For breakfast I have been eating either poached eggs on toast or fruit, but it's getting kind of boring! Don't get me wrong, I love fruit and eggs, but having them everyday can get a bit tedious! I ate 2, 30% reduced fat croissants yesterday for breakfast, and they were lovely, albeit, not the healthiest option!

I might add I am from the UK and the majority of my friends list are Americans, I love reading over their meals and success stories, but a lot of the time the things they eat I have never heard of, so recipes that are on both sides of the pond would be muchos appreciated!

Also, feel free to add me as a friend! I'm not the kind of guy who goes around adding random people, but I find other peoples motivation, success stories and recipe ideas keep me more focused on my overall goal.

    I am uk based, what sort of food do you like, do you hate anything in particular?

    Mornings I usually go fruit but if you like eggs and want it a bit different make an omelette with some salmon in or something like that, on a weekend I make pancakes and boost the egg (I have to use rice flour but pretty sure it makes no difference taste wise) have fruit on them instead of sugar etc.

    lunchs are a pain but look on the forum found some awesome stuff there, is it all meals you are finding you are eating the same?

    Healthy breakfast:
    (granted, I'm a veggie loving freak!)

    1 chicken sausage (any flavor that fits your fancy, here in the states I buy several diff brands - chorizo flavored, jalapeno mango, garlic fontina and spinach, etc!) cut up, with a fried egg and steamed broccoli, protein and lean veggies for breakfast, woohoo!

    2. smoothies: 1 cup berries + 1 cup spinach + 2 scoops protein powder + almond milk or greek yogurt and milk

    For breakfast this week I've been totally into Baked Oatmeal. Yum. I had chocolate/peanut butter the other day, and cinammon this morning. Both from the Chocolate Covered Katie website.

    You could do a healthier breakfast sandwich - whole wheat muffin or break, egg and a slice of ham or turkey bacon or turkey and cheese (low fat if you want).

    Greek yogurt is great either with granola, fruit, honey . . .

    For dinner, I love salmon. Wrap it up in foil topped with whatever I have on hand (olive oil, tomatos, broccolli is one fav, some teriyaki sauce another). I usually serve with couscous.

    Turkey burgers (ground turkey, salsa, an egg (or egg white)). Mix and grill. Super delicious topped with a bit of guac.

    Also like an omelette, sautee fave veggies in olive oil or coconut oil or butter (shallot + chopped broccoli + diced red bell pepper), remove, add two whisked eggs to pan until lightly yellow, toss veggies and cheese and/or meat choice in center, flip, and voila - omelette! with fruit or slice of whole wheat toast!

    or: savoury oatmeal: one serving steel cut oatmeal made with water in microwave, top with sautéed spinach, fried egg, and parmesan and evoo and salt and pepper, yum!

    or if you like sweets google protein muffins or protein bars, make a batch on a sunday and you have quick to go meals for the week! eat with piece of fruit :)

    Here are a few of my favorite things to eat

    Most of the time for breakfast I have my protein shake with some fruit. (mainly cause I workout early in the morning). If I have more time I will make scrambled eggs with turkey bacon and whole grain toast.

    Lunch idea's~ Honestly a lot of times I eat my leftover meals from dinner from the night before. Otherwise salad with chicken breast with lots of veggies. or a Peanut butter (healthy one) sandwich which with some kind of vegetable on the side.

    Dinner ideas
    Chicken taco's~ chicken with green, red peppers and onions cooked in a little bit of olive oil and garlic. Spinach, salsa rolled up in a high fiber tortilla. Veg on the side
    Sweet potatoes (cooked in the oven or on the grill) add a little onion, garlic and seasoning (green peppers are good in this too)

    There is a few ideas. :) I am a big chicken eater. I love my George Forman (don't have to use any oil) or on the grill.

    I don't like peas! Especially mushy peas! apart from that, I pretty much like anything! I have had omelettes quite a few times, mainly with mushrooms and mixed frozen peppers, but I found them to be more calorific than poached eggs! I suppose something to go with the poached eggs on toast would be a good idea, like baked beans, but again, they are fairly high calorie! But yeah, I do often find myself eating the same meals sometimes, I guess I'm sticking to the meals I know promote the weight loss that I have had!

    @ rachface - I love veg! My better half is a vegetarian, so I do eat a lot of veg myself, never had it for breakfast though, although, the veg omelette you mentioned does sound really good, I will give that a try for sure! As far as sweets go, I do like them, but I'm finding them one of the easiest things to cut out of my diet completely!

    @Nicola - You know, I've not eaten Salmon since I was a kid, my dad used to make Salmon sandwiches, and I recall not liking it, although I do love fish in general! Can you get boneless salmon? As that is one of the major things putting me off with it!

    Breakfast is my favorite meal of the day. I will gladly eat breakfast food all day long! A couple favorites, a breakfast sandwich with 1 or 2 eggs, some low fat cheese and deli sliced turkey breast. Good boost of protein. I also like to make a breakfast burrito, I use one frozen low fat sausage patty, cut it in half and lay end to end on a tortilla. Scramble a couple eggs, and add some low fat cheese. Wrap it all up in the tortilla and grill it in the dry pan for a bit to toast up the tortilla.

    And since you're on my FL, if you have any questions about my meals, let me know, I'd be glad to share recipes or whatever.

    What are protein shakes like? Do they really help take the edge off with hunger? I used to do A LOT of heavy weight training when I was younger (when I was 20 - 22 years old) and I tried protein muscle formula shakes then, and they didn't really satisfy my hunger, so I reverted back to a high protein breakfast! Them days are gone now, and I just need to lose weight! Your chicken tacos idea does sound really good, will deffo give that a try!

    That sounds really good Meg, a lot of people seem to eat turkey breast, I will deffo have to start buying some in. I do eat turkey breast when I get healthy option Subway meals, but I have that much salad on them I hardly taste it! And for sure, I'll drop you a message if I get stuck for ideas!

    I use this stuff called Designer Whey (it has low carbs and low sugar and higher protein) Bonus is it tastes like milk shakes or if I add greek yogurt it is like a smoothie. I love them. I drink them to help build my muscles back up from lifting heavy (well what I consider heavy haha) It really has nothing to do with satisfying my hunger so much.

    Fast, easy and satisfying! Susan's sausage and peppers pasta!

    1 link Jennie-o Italian Turkey Sausage(sweet or hot) 160 cal
    1/4 small each red,green bell peppers cut in strips 20
    1/8 small Onion cut in strips 16
    2 tsp Garlic minced 4
    1-2c Brocccoli florets and or zucchini slices 35-60
    1/2c Fat Free chicken broth 0-5
    Non stick spray(I use my misto sprayer-EVOO) 10

    2 oz dry wt. angel hair/thin spaghetti/linguini 200-210

    1. Put sausage in a small fry pan over medium heat, surround it with the peppers and onions.
    Lightly brown sausage turning occasionally-you are not cooking it through this way, just get some color on it.
    2.Add garlic when peppers/onions wilt a bit and cook for 1 minute stirring.
    3. Add broth and cook covered on low for 2-3 minutes-until sausage is cooked through.
    3.Meanwhile bring a small pot of water to a boil, cook spaghetti al dente according to package directions.
    4.Last 1-2 minutes of pasta cooking, add the broccoli/zucchini.
    5.strain pasta-veg and turn out into a bowl.
    6. Pour sausage pepper mixture over pasta.
    7. sprinkle with parmesan if desired

    One of my recent favorite breakfasts has been plenty of coffee (assume all of my ideas start with this), 1/2 a whole-grain English muffin with 1Tbsp peanut butter and 1/2Tbsp honey, and two strips of turkey bacon. Dudes might want to double that.

    Another good one is toasted English muffin with 1Tbsp natural fruit preserves and turkey bacon on top -- the salty/sweet combination is positively divine. Maybe have a poached egg and small cup of (almond, soy, or cow's) milk on the side.

    A toasted bagel thin smeared with about 1/4 avocado, then layered with thin-sliced onion rounds, thin tomato slices, a slice or two of turkey bacon, and topped with a poached egg? That's pretty much nirvana on a plate. You could pop some spinach on there, too, for extra smugness to start your day.

    You can whip up a faker bechamel by simmering 1/4cup almond milk & slowly adding one or two ounces of grated cheese; put your bog-standard poached eggs on top of an English muffin, drizzle this on top, and scatter some berries over your plate. Bam, you just went fancydelicious in like 10 minutes.

    And then, of course, you can always do the usual scrambled eggs or whites/sauteed veggies/virtuous scoop of yogurt plate, but... only as a last resort. ;)
